I was a latecomer to the wonderful world of grilled cheese. When I was younger, I didn't eat much cheese, due to apparent insanity, and when I got a little older, I honestly thought that you couldn't make grilled cheese without using American cheese.
Sooooo not a fan of American cheese.

If you're looking for a meal that's quick and jam-packed with vegetables, this is a great one to try! I love it because it's got a delicious Caesar taste and doesn't make me feel guilty for eating it. Plus, I can pick and choose what vegetables I want in it - always a good thing in my house.

Roasted Red Pepper Dip - Serves 8 as an appetizer
Original recipe from Whole Foods.
Try this alternative to the usual hummus. Muhammara is a delicious Syrian recipe for a spread of roasted red peppers, toasted walnuts and a touch of spice, offset by pomegranate molasses.

This recipe came from the folks at Whole Foods and it is packed full of different flavors that all compliment one another! I served it with pilaf which went really well together! I inadvertently bought sheep's milk cheese instead of goat cheese, but I couldn't tell the difference.

I saw Ellie Krieger make something very similar on Food Network and we re-vamped the recipe a little bit tonight. It was DELICIOUS.
Ingredients:
1 lb chicken breasts, cut up in bite-sized pieces
3-4 garlic cloves, minced
1 small onion, chopped
olive oil
1/2 cup chicken broth

The other night I roasted a bunch of vegetables to have with steak. Of course I always make enough for ten people and there is only my husband and I. I had a lot left over and I didn't want to waste it so I decided to make soup.

A couple weeks ago I went to lunch at a deli down the street from my work and had the most delicious Tomato Gorgonzola soup. I decided to try and make it myself. I scoured the internet for a recipe and ended up mixing several together to make this one.

Southwest Chicken with Pene
Serves Six
2 breasts of chicken (wash & Cubed)
1 box Pene or Large Shells
Worsteshire Sauce
Salt
Pepper
Olive Oil
Parmesan
½ Eggplant
1 Zucchini
2 Fresh Tomatoes (Or Canned)
3 Cloves Fresh Garlic
1 Tbsp Oregano
1 Cup Cream Cheese
2 Cup Half & Half or Heavy Cream
1/2 Jalapeno Seeded or 3 Rounds from Preserved Jar
One Whole Roasted Red Pepper (Fresh or from the Jar)
Red Pepper Flakes
½ Lemon Juice
Set oven to 350
In a blender add the Cream, Cream Cheese, Roast Red Pepper, Jalapeno, 1 tsp salt, 1 tsp pepper, a pinch of red pepper flakes. Set aside. NOTE: If you are using a fresh jalapeno or a fresh red pepper we will roast them with the other veggies before adding them to the sauce mixture.
