Here's a healthier version of Waldorf Salad, which can be high in saturated fat. In place of one of the Gala, Fuji, or Red Delicious apples, I sometimes use a Grapple--the apple that tastes like a grape--for a more unique flavor. For serving, I think it's especially pretty when presented in a "bowl" made from a lettuce leaf.

I went to a bbq last night and was asked to bring a side dish. I had recently been watching Giada on Everyday Italian and she made this salad that looked amazing and I decided to make it with just a small change.
1 pound orzo pasta
3 tablespoons extra-virgin olive oil, plus 1/4 cup
2 cups fresh arugula (about 3 ounces) (I couldn't find arugula in my grocery store so I used baby spinach instead)
3/4 cup crumbled ricotta salata cheese (or feta cheese) (amazingly I was able to find this cheese!

Making a good salad is truly an art. Salads seem to be the epitome of health food, however, there are many big mistakes made that drastically reduce or destroy the nutritional value of your salad.
Let's outline the steps to making a fabulous salad both in taste and nutrition!

Aside from the standard lettuce (what type do you use?), tomato and cucumber slices, what do you like in your salad (including those 3 previously mentioned items) ?
My salads are made of: romaine lettuce, some iceberg lettuce, shredded raw carrots, cucumber slices, tomato, raw onion slices, sometimes raw almonds or plain soy nuts and I rarely use dressing (if I do include dressing I use those Salad Spritzers.)Also, I sometimes add garbonzo & kidney beans, maybe some gorgonzola cheese crubs.

I recently went to visit a friend in NYC, and she had a $100 gift card for Cipriani, so we had lunch at the downtown spot. Our bill — for lunch — was $150 with tip. The food was nice but nothing mind-blowing, and it was ridiculously overpriced.

Everyone has different tastes, so which types of fruit do you include when making fruit salad?
I include: Watermelon, Strawberries, Red Grapes, Pineapple, Raspberries, Cantatope, Blueberries and sometimes orange chunks. I used to include Kiwi slices however now I'm allergic to them (I love them though.)
