This recipe is one that I've modified from a Pillsbury recipe for Huevos Rancheros, so hopefully I manage to remember everything correctly. Anyway, it's quick, easy, and my husband and I love it! It's also great because it can definitely be an assembly line dinner, with each person putting the various ingredients they've chosen together to make their own version of huevos rancheros.

Being a huge fan of salsa, I've been trying more and more in recent years to make my own, using fresh ingredients that provide the best flavor and taste. And when I stumbled across this recipe today, I fell in love with it. It's from Simply Homemade Food Gifts and I really like the idea of making my own salsa, keeping some for myself and packaging up the rest as a gift for someone else.

This recipe of my daughter's is the best Ive ever had! Really, it is! She got the recipe from someone who found it in a cookbook, but it's been tweaked throught the years.

I made this yesterday for the 4th of July. It was delicious!
INGREDIENTS:
1/2 cup finely chopped Vidalia onion
4 cloves garlic, minced
8 large ripe Roma tomatoes, peeled and seeds removed, chopped
1 small can diced tomatoes
2 Jalapeno peppers, finely chopped
5 tablespoons minced cilantro
3 tablespoons lime juice
pepper
PREPARATION:
Combine onions and garlic with chopped tomatoes, peppers, and cilantro.

I was wondering if any of my fellow Kitchen Goddesses have a recipe for salsa. I am kind of boring and just wanted a tomato salsa, nothing fruity or out of the ordinary. My mom's tomatoes are coming in soon and I have a sick obsession with salsa and would like to try making some.

4 turkey cutlets (about 1/2 pound each), pounded to about 1/4-inch thick
2/3 cup all-purpose flour seasoned with salt and cayenne
2 tablespoons vegetable oil
2/3 cup low-salt chicken broth
1/4 cup cider vinegar
1 teaspoon chili powder
Cayenne
4 plum tomatoes, peeled, seeded, and finely chopped
4 scallions, minced
2 fresh or pickled jalapenos, seeded and minced (wear rubber gloves)
2 tablespoons chopped dry-roasted peanuts
2 tablespoons minced fresh cilantro
Dredge the cutlets in the flour mixture, shaking off the excess.
In a heavy skillet, heat the oil over moderately high heat until it is hot but not smoking, and saute the cutlets for 1 to 2 minutes on each side, or until they are golden brown on the edges and cooked through. Plate cutlets and keep them warm.

Slow Cooker Salsa Chili

Makes:6 servings
1 lb lean (at least 80%) ground beef or ground turkey
1 medium onion, chopped (1/2 cup)
2 cups Old El Paso® Thick 'n Chunky salsa
1 can (15 oz) tomato sauce
1 can (4.5 oz) Old El Paso® chopped green chiles
2 teaspoons chili powder
1 can (15 to 16 oz) pinto beans, drained, rinsed
Shredded Cheddar cheese, if desired
Sliced green onions, if desired
Directions
1. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain.

I don't know about you, but I like my food with a little spice. And salsa is one of my favorite ways to add a little kick to whatever food I happen to be making. Sometimes I'm pretty sure that it's the perfect condiment, especially since you can tailor it to your likes and dislikes, even spiciness level.

Cook Time: 6-8 minutes
Ingredients
1 large lemon
3 tsps honey
2 tsp minced garlic
3 tsp evoo (extra virgin olive oil), divided
1/2 tsp salt
1/4 tsp freshly ground pepper
4 (4 oz) skinless, boneless chicken breasts, about 1 lb
2 cups diced strawberries
2 ripe medium peaches, peeled and diced
1/4 cup minced red onion
1/2 cup diced red bell pepper
2 tsp minced jalapeno chili
Step 1:
Preheat grill or broiler.
