Shrimp with Arugula and Penne Pasta
Shrimp with Arugula and Penne Pasta
Ingredients
1/4 cup, plus 2 tablespoons, olive oil
2 pounds medium shrimp, peeled and deveined
1/4 teaspoon red pepper flakes
1 teaspoon dried oregano
1/2 cup sliced of dry or jarred sundried tomatoes
2 tablespoons chopped shallots
2 bunches arugula
1 1/2 tablespoons freshly squeezed lemon juice
1 pound penne pasta, cooked
Instructions
1. Heat 2 tablespoons oil in skillet; add shrimp, red pepper flakes, and oregano. Sauté 2 minutes.

Serves 4–6
Green Sauce
2/3 cup lightly packed parsley leaves
3 tablespoons drained capers
1 clove garlic, chopped
juice of one lemon
1 teaspoon anchovy paste (optional)
1/2 teaspoon Dijon mustard
3/4 teaspoon salt, divided
1/2 cup plus 2 tablespoons olive oil, divided
freshly ground pepper to taste
2 zucchini, cut lengthwise into 1/4-inch slices
1 pint cherry tomatoes, halved
1 1/4 pounds raw shrimp (large), peeled
3/4 pound linguine
Ingredient options: Use spaghetti instead of linguine. Replace half of the parsley with basil.
If using wooden skewers, soak in water for at least 30 minutes.

It was really good! My 5 and 6 year old had two servings even. :)
8 ounces angel hair pasta
1 tablespoon olive oil
1 large clove garlic, peeled and minced
1/2 cup chicken broth
2 tablespoons lemon juice
1 pound large shrimp, peeled and deveined
1/2 cup grated Parmesan cheese
1/4 cup whipping cream
1 tablespoon finely grated lemon peel
1/2 teaspoon salt
3 tablespoons chopped fresh cilantro
Prepare pasta according to package directions; drain.

This dish is very easy and flavorful. Served with a salad, it makes a dinner (and the leftovers were pretty good, too!)
2 tsp cornstarch
1 14.5 oz can chicken broth
3 tsp lemon juice
2 tsp olive oil
1 lbs. easy peel shrimp, shelled
4 cloves garlic, minced
3 tsp fresh or 1 teaspoon dried parsley

I saw Giada making this the other day on the food network and it just looked delicious and I had to try it. I am making it tonight for my husband for our wedding anniversary and I am excited about it. I am going to leave out the onions because I hate them, so I will let everyone know how it turns out tomorrow.

Okay I am planning a bbq to celebrate my 32nd birthday in July. I usually get very obsessed with planning the menu and start making lists way in advance. So far here are my thoughts.

Ingredients:
- 3 Tablespoons extra virgin olive oil
- 4-5 cloves minced garlic (or to taste)
- Frozen (defrosted and drained) cooked shrimp (tails can be on or off)
- 1/2 cup white wine
- 3 cups fresh baby spinach, cleaned and dried
- 1 teaspoon onion powder
- 2 teaspoons garlic powder
- 1 teaspoon salt free Italian seasoning
- 1/2 teaspoon sea salt (optional)
- 1/2 teaspoon pepper
Directions:
- Heat the olive oil in a large skillet over medium heat
- Add the minced garlic and saute until soft
- Add the thawed shrimp to the skillet and add the wine, cook 1 minute
- Add the baby spinach to the skillet and gently stir until the spinach begins to wilt
- Season with the onion powder, garlic powder, Italian seasoning, salt and pepper
- Remove from heat when spinach is bright green and wilted, being careful not to overcook the shrimp
- Serve over whole wheat pasta or brown rice

The only thing "premium" about these strips is the caloric price you pay. Add a large fries and regular soda and this seemingly innocuous chicken meal tops out at 1,710 calories.
