Have you ever heard of this dish before? It's something that I've always wanted to try and seen in various cookbooks, but Cioppino just isn't something that I've ever gotten around to making.
To tell you a little more about it, Cioppino is a fish stew derived from the various regional fish soups and stews of Italian cuisine.

Personally, I think that paella is one of the best dishes around, even though it's something that I don't often make. It's great because of the flavors in it and the fact that whether you love chicken, sausage, or shimp, there's something in this dish for you!
For those of you unfamiliar with the dish, it's a staple in Spain and my first introduction was indeed in a high school Spanish class.

COCONUT SHRIMP WITH RED CURRY SAUCE
Recipe courtesy of Tyler Florence, Food Network
Peanut or vegetable oil, for frying
1/4 cup cornstarch
3 large egg whites
Kosher salt and freshly ground black pepper
2 cups flaked coconut
1 1/2 pounds jumbo shrimp, peeled with tails on
Red Curry Sauce, recipe follows
1 green onion, white and green part, chopped
1 handful fresh mint, hand-torn
Fried rice, for serving
Steamed broccoli, for serving
Heat 3 inches of oil in a large deep skillet or heavy pot to 325 degrees F.
In a small bowl, mix the cornstarch, egg whites, salt, and pepper until foamy. Spread the coconut out in a pie dish.

Serves 4–6
Green Sauce
2/3 cup lightly packed parsley leaves
3 tablespoons drained capers
1 clove garlic, chopped
juice of one lemon
1 teaspoon anchovy paste (optional)
1/2 teaspoon Dijon mustard
3/4 teaspoon salt, divided
1/2 cup plus 2 tablespoons olive oil, divided
freshly ground pepper to taste
2 zucchini, cut lengthwise into 1/4-inch slices
1 pint cherry tomatoes, halved
1 1/4 pounds raw shrimp (large), peeled
3/4 pound linguine
Ingredient options: Use spaghetti instead of linguine. Replace half of the parsley with basil.
If using wooden skewers, soak in water for at least 30 minutes.

8 oz. fresh green beans, trimmed and halved crosswise
1 tsp. Jamaican jerk seasoning

It was really good! My 5 and 6 year old had two servings even. :)
8 ounces angel hair pasta
1 tablespoon olive oil
1 large clove garlic, peeled and minced
1/2 cup chicken broth
2 tablespoons lemon juice
1 pound large shrimp, peeled and deveined
1/2 cup grated Parmesan cheese
1/4 cup whipping cream
1 tablespoon finely grated lemon peel
1/2 teaspoon salt
3 tablespoons chopped fresh cilantro
Prepare pasta according to package directions; drain.

Traditionally, Shrimp Scampi is taboo for anyone concerned about their fat intake. But no more! I've adapted the customary scampi recipe to make it heart healthy.

Yummm....I love shrimp and this is a healthy, easy recipe that is even great as cold leftovers!
45-50 pieces of raw shrimp, peeled and deveined
1 zucchini, julienned
1 red bell pepper, cut into strips
1 C sliced mushrooms
2-3 Tbs lemon juice or lime juice
2 Tbs olive oil
1/4 C fresh cilantro
2 Tbs chopped parsley
1 avocado, chopped
Salt to taste
2 flour tortillas
Lettuce leaves
In a large skillet, cook the shrimp in 1 Tbs of olive oil. When halfway done (it won't take long!) add the lemon or lime juice.

This is also from Totally Dairy-Free Cooking and no, I haven't tried it, but it looks easy and sounds delicious!
1 1/2 tsp coriander seeds
4 Tbs tomato paste
1 1/2 oz tamari soy sauce
2 Tbs rice wine
2 Tbs chili garlic paste
1 Tbs lemon juice
1 Tbs olive oil
1 1/2 tsp chili powder
36 medium shrimp, peeled and deveined
6 8-inch flour tortillas or corn tortillas
Guacamole (see my previous posted guac recipe)
Whisk all ingredients together except for the shrimp, chips and guacamole. Add shrimp, stir and refrigerate a minimum of 2 hrs, up to 24 hrs.
