I'm not sure exactly why, but I have to admit that this recipe intrigues me. It's rare that I have stuffed peppers, but something about the idea that I can make them in a slow cooker just makes me want to rush out, buy the ingredients, and make them right now. The combination looks really delicious, even though I'd probably use red peppers rather than green.

Stuffed Red Peppers
What you need:
- 4 medium red peppers, halved lengthwise and seeded
- 2 cups cooked brown rice
- 2 medium julienned carrots
- 1 medium onion chopped
- 3 ribs celery chopped
- 1 teaspoon dried thyme
- 1 tablespoon chopped fresh Italian parsley
- 3 cloves of garlic minced
- 1/2 cup pureed tomatoes (go ahead and use canned)
- 1 cup dry red wine
- 8 ounces grated Gruyère cheese
- 2 eggs, lightly beaten
- 1/2 roasted cup pine nuts
- salt and pepper
What you do:
Peel and press all three garlic cloves and let it sit to release the cancer fighting enzymes.
Spray a large pan with olive oil cooking spray. Sauté carrots for 3 minutes on medium heat.
Add onion, celery and herbs and sauté for 3 minutes.

It took me a long time to get used to brown rice, but I really like the nutty flavor it adds to this recipe. I received this recipe from my nutritionist, and I find it particularly flavorful. Tell me what you think.....Is there anything you think you might add?

This is so yummy, I love stuffed veggies!
Peppers are the best, and who would of thought, perfect for a serves two dinner. :)
I made these last night without the rice and replaced with pumpkin, yum!

These are soo delicious! and healthy!! I love filling peppers and roasting them in the oven with either great vegetables and olives, or with ground meats and different flavors!

You will need:
4 green peppers
1 medium onion
1 pound ground meat
1 small can of mushrooms
1 large can diced tomatoes
1 box instant stuffing mix
In a pan ground your meat with your onions. Strain when the meat is no longer pink.
In a pot add tomatoes and mushrooms together
Add box stuffing, meat, and onions.

Tonight I experimented and made myself quinoa-stuffed red peppers. It was really easy and quite yummy.
I got the recipe from Shape.com (http://www.shape.com/davidkirsch) but modified it a bit to my liking.

This weekend my friend April was having an appetizer potluck birthday party in the park. I wasn't sure what I was going to make, so I got up early and went to the farmer's market to see if I could find something that inspired me. I ended up getting sidetracked on my way to the market and ended up not having too much time.

This recipe came from the folks at Whole Foods and it is packed full of different flavors that all compliment one another! I served it with pilaf which went really well together! I inadvertently bought sheep's milk cheese instead of goat cheese, but I couldn't tell the difference.
