Yesterday I decided to go a little creative with my meal. I've been craving all things spicy lately, so I decided to make some enchiladas. But I'm also trying to cut back on the meat and up the veggie content going into my body, so I decided that rather than traditional beef enchiladas, I'd see what I could do with the vegetables I had on hand.

If you're looking for a meal that's quick and jam-packed with vegetables, this is a great one to try! I love it because it's got a delicious Caesar taste and doesn't make me feel guilty for eating it. Plus, I can pick and choose what vegetables I want in it - always a good thing in my house.

This recipe is excellent for all budget types and tastes, provided, of course, that you're a fan of vegetables.
If you're not a fan of mushrooms, like me, feel free to substitute them out and find another vegetable you have around your house. We always have baby carrots and I usually try to snap up zucchini when I can.

i really don't have the time to blog tonight. i like to get plenty of sleep and wake up quite early (before 5am), so i don't always have too much time after work for recreational activities. i had made up my mind to cook a really cool-sounding recipe that i had come across recently, so i cooked it and took photos and thought i would probably get around to the blog post this weekend.

Lately, my very favorite and most often used thing in my kitchen is my crockpot. I love just throwing everything in there in the mornings and coming home to a meal that cooked itself. Nothing better, in my opinion.

I was given the honor of cooking Thanksgiving dinner for my family this year. It was only three of us so it wasn't a huge challenge, but still a fun project!
This meal is pretty similar to my Halloween Dinner, but the food was such a success I had to make it again.

Tandoori turkey in the oven
For a few years now I've wanted to try to marry the traditional Southern Indian food my husband grew up enjoying with Thanksgiving as I know it (Southern girl with a love of spice and heat).
So this year I did a trial run of a tandoori-style turkey made in the oven. By next year I hope to build my own tandoor, or at least grill this guy, because it needs a little more heat to crisp up properly.

Another TeamSugar blogger posted information on a store called Penzeys Spices. Everything looked so delicious online, and even better - they have 2 stores in the Chicagoland Area! So this morning, I made a trip to the store, and it was a goldmine =0)

in the grocery store, there are two sections that i can just linger in all day long. one is the baking aisle (*sigh*) and the other is the produce section. i love to stare at the vegetables, have a new one strike my fancy, take my time choosing the best of the store's selection.
