For the perfect autumnal presentation, serve chili in a steamed butternut or acorn-squash "bowl." To make, simply halve the squash, remove seeds, place halves upside-down in a shallow baking dish and microwave on high 5-7 minutes, until fork-tender.

Here's another that I found from a blog titled "What Do I Know?" Have not tried it myself but it looks good with or without the pineapple salsa. Plus the recipe for the pineapple salsa would be great with other recipes.

If you pay attention to the first two judges,
the reaction of the third judge is even better. For those of you who have/do lived in Texas, you know how true this is.
They actually have a Chili Cook Off about the time Halloween comes around.

This recipe really stuck out in my mind for one particular reason: YOU DON'T HAVE TO BROWN THE MEAT! (Although if you're vegetarian you could very easily just leave it out and it would still be delicious.)
And thank goodness for that. I use my slow cooker because I love the idea of dumping everything in there in the morning and coming home at night and dinner is just sitting there, waiting for me, with tempting smells wafting through the house.

If you've had a challenging morning at work, a good lunch can certainly lift your spirits and inspire you to carry on. For some, though, the motivation to prepare such a meal is hard to stir up, particularly at times when relaxing is what you want to do.
It's understandable that after a long day at the office, preparing and eating supper and getting things tidied up, the last thing many people want to do is think about what to make for lunch the next day.

My mother is a reader of Woman's Day Magazine (whose recipes I usually love) and she passed on these 2 ingredient recipe cards to me. Sure, some of them are a little odd and I will probably never, ever attempt, but there were a few that immediately grabbed my attention and I can't wait to try out! (Pineapple with coconut sorbet...:DROOL:)
