Usually I don't like to get too personal in my groups, but sometimes I think maybe I should--so this isn't such a sterile and dry recipe submission group.
For those of you who don't know, I'm in the process of becoming vegetarian. It's not because of ethical reasons, more on the health aspect, as well as the weight loss benefits (or that is what I've been told).

For Lent this year, I've given up eating most meats, so I've been trying to find delicious mainly vegetarian recipes that aren't just pasta, pasta, pasta. So I've been trying out a lot of YumSugar and TeamSugar recipes and I've had great success with the ones that I've tried. But this recipe comes from Allrecipes, so I thought that I'd share it with you.

I love lo mein, but I usually don't ever venture far from my traditional chicken lo mein. However this recipe will probably hold a special place my recipe book.

I have always loved experimenting in the kitchen and I have been a dietetic (health reasons as opposed to moral/ethical) vegan for a little over a year now -- while my diet has expanded to encompass vegetarian choices at present because my budget is somewhat limited while on the job search (^-^) I do plan on following vegan guidelines again as soon as possible, but I figured I'd share the wisdom I've garnered over my year-long journey as the Big V.
Today I've decided to share my own recipe for home-made, Mayan Waffles; chocolate with a little kick to get you going in the morning (but don't let me limit you -- some of my best dinners have circled around breakfast foods). The special equipment you'll need for this recipe is a handy waffle iron.

I made this delicious version over the weekend--and I didn't even tell my husband it was healthy or on the vegetarian website or I knew he probably wouldn't eat it. ;-)
French Onion Soup - Serves 6

Traditional French onion soup can come in as high as 39 grams of fat per serving. Ours has just 10.5 and tastes amazing.

Five-Layer Vegetable Strata with Pesto
From Fresh from the Vegetarian Slow Cooker
1 1/2 cups slow cooker or one 15.5 ounce can cannellini or other white beans, drained and rinsed
1 cup vegetable stock
2 tablespons pesto
1 tablespoon olive oil
2 large Yukon Gold potatoes, peeled and thinly sliced
1 large yellow onion, cut in half an dhtinly sliced into half moons
Salt and Pepper
1 medium size red bell pepper, seeded and thinly sliced into rings
1 large zucchini, thinly sliced
1 large ripe tomato, thinly sliced
Directions
1. In a food processor or blender, process the beans, stock, and pesto together until well blended. Set aside.

Goat Cheese Cheesecake with Roasted Rosemary Pears
(recipe from Whole Foods Market)
Substituting goat cheese for some of the cream cheese in a cheesecake results in an absolutely stunning dessert that is slightly tangy and not too sweet. Add some rosemary-roasted pears and your guests will be dreaming of this cake for days after you serve it. Make it natural by using only organic ingredients.

Strawberry Sorbet - Makes 1 quart

4 lb. large Yukon gold potatoes (about 8 or 9 potatoes), peeled and cut into 1/4-inch-thick slices
1/4 cup olive oil
1/4 cup pesto
1 lb. low-fat ricotta cheese
1/2 cup Parmesan cheese
1 large egg plus 3 egg whites
