Healthy Recipe: Apple Pear Oatmeal Crisp

It's harvest time for apples and pears, and nothing says Autumn like warm crisp featuring both Fall fruits. Here is a variation of a recipe from RecipeZaar. I substituted a few things like Sucanat for brown sugar, whole wheat flour for all-purpose flour, and Earth Balance margarine in place of butter. The soft, cinnamony fruit and crunchy oat topping are a perfect combination, and it was so delicious that my family polished off the entire crisp within a day.

This would make a great dessert for Thanksgiving, because it's a cinch to whip up. To see the recipe read more.

Healthy Recipe: Apple Pear Oatmeal Crisp
Adapted from RecipeZaar

Ingredients

2 apples, sliced
3 firm pears, sliced
2 tablespoons Sucanat
1 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 to 2 tablespoons lemon juice
2/3 cup water

Topping

1 cup oats
1/3 cup whole wheat flour
3/4 cup Sucanat
1 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons of Earth Balance, melted

Directions

Preheat oven to 375°F.

Remove the cores and slice the unpeeled fruit. Place slices in the bottom of a greased nine-inch dish. Drizzle with lemon juice.

Sprinkle two tablespoons of Sucanat, ground cinnamon, ground nutmeg, and water on the fruit.

In a separate bowl, combine the dry ingredients. Add melted Earth Balance and mix until crumbly.

Spread the crumb mixture evenly on top of the fruit.

Bake for 50 to 60 minutes, so the top is lightly brown and the fruit is bubbly.

Serve warm or cold with vanilla ice cream, vanilla yogurt, or enjoy by itself.

Ready to Try the World's Best Apple Pie?

Because I haven't been a huge pumpkin pie fan until extremely recently, I've tried to take advantage of Fall's other stellar produce to end the season's celebrations on a sweet note. Like everyone says, there's nothing more American than apple pie. To that I'd like to add: there's nothing that exemplifies Autumn more than the smell of a baked-from-scratch apple pie. This one is perhaps the best I've ever tasted! It's piled high to the sky with fresh apple filling, and the crust calls for shortening instead of butter, which makes it exceptionally flaky. To make this for Thanksgiving, Christmas, or just because, keep reading.

Thanksgiving Side Dish: Apple Squash

Thanksgiving is one of my favorite holidays because I love all the warm, savory dishes. This one has been in my family for years and it's sweet, creamy, and has a crunchy topping that reminds me of homemade mac and cheese. It's easy to prepare ahead of time, and is a great alternative to mashed potatoes or stuffing.

To see the recipe and find out how many calories are in one serving read more.

Recipe for Apple Squash
a family recipe

Ingredients

Bottom layer:
4 Cortland apples, peeled and sliced
1 1/2 tablespoons Smart Balance margarine

Middle layer:
8 cups butternut squash (about two whole), peeled, de-seeded, and diced
2 tablespoons Smart Balance margarine
2 teaspoons brown sugar
1/4 teaspoon salt
1/4 teaspoon pepper

Top layer:
2 cups fruit juice sweetened corn flakes, crushed
1/2 cup chopped pecans
2 teaspoons brown sugar
2 tablespoons Smart Balance margarine, melted

Directions

Preheat the oven to 350° F.

Heat two tablespoons of Smart Balance in a skillet and add the sliced apples. Cover and simmer for five minutes. Spread in bottom of a casserole dish.

Boil the butternut squash for 15 minutes.

Mash the squash with two tablespoons Smart Balance, two teaspoons brown sugar, salt, and pepper. Spread it on top of the apples.

Mix the two tablespoons of melted Smart Balance with the crushed corn flakes, two teaspoons brown sugar, and chopped pecans. Sprinkle on top of the squash.

Bake uncovered for 15 minutes. Serve warm and enjoy.

Makes 10 servings.

Fast & Easy Dinner: Pork Chops With Apples

The classic pork chops and applesauce go sophisticated with this recipe. Instead of bone-in pork chops and pureed apples, it employs boneless pork loin and whole Granny Smith apples.

The apples are sautéed until soft and the pork is topped with a simple pan sauce. Although the ingredient list calls for grainy mustard, if you dislike the polarizing condiment, simply omit it. Serve with a glass of white wine and you've got an elegant meal to start the weekend. Get the recipe and read more.

Pork Chops With Apples
From Real Simple

Ingredients

2 tablespoons all-purpose flour
1 teaspoon ground cumin
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
4 6-ounce boneless pork loin chops, or one 1 1/2- to 2-pound pork loin
1 tablespoon vegetable oil
1 tablespoon butter
2 small Granny Smith apples, halved
1/4 cup fresh parsley, coarsely chopped
1/2 cup chicken broth
2 tablespoons champagne or white wine vinegar
2 tablespoons coarse grain mustard

Directions

Mix together the flour, cumin, salt, and pepper on a large plate. Lightly coat each piece of pork with the flour mixture; set aside.

Heat the vegetable oil and butter in a large skillet over medium-high heat. Sprinkle the apple halves with a pinch of salt and pepper. Cook the apples cut-side down about 5 minutes or until golden brown. Remove from the skillet, cover, and set aside.

Place the pork in the skillet, sprinkle with the parsley, and cook until the meat is golden brown and crispy, 4 to 5 minutes per side.

While the pork is cooking, whisk together the broth and vinegar. Remove the pork from the skillet and set aside. Pour the broth mixture into the skillet, stirring and scraping up any browned bits. Bring to a boil and cook until slightly thickened.

Divide the pork among 4 plates and pour some pan sauce over each. Before serving, place an apple half and a dab of mustard on each plate.

Serves 4.

Happy Hour: Happy Apple Rum Twist

This October, instead of being bummed about Summer's departure, I've decided to get excited for Fall. I've changed the background on my phone to an image of autumnal flowers, I've searched FabSugar for Fall-look inspiration, I've decorated my house with white pumpkins, and most importantly, I've starting sipping this apple cocktail.

Apples are a quintessential ingredient at this time of year, thus a stimulating concoction made with apple cider and dark rum seems seasonally appropriate. Although the recipe is very easy, the resulting drink is complex, refreshing, and delicious. I recommend using a dark, rich rum like Jamaica's Appleton; it adds a welcoming depth of flavor. To embrace Fall, mix this cocktail!

Reader Recipe: Apple Butter

Browsing TeamSugar the other day, I was absolutely taken by a Fall recipe. This apple butter was created by Kitchen Goddess founder, Twinkle, when she wasn't able to locate any apple butter in her adopted homeland, Finland. Since she is a domestic divinity, she took matters into her own hands and came up with an original recipe. I can't get enough of apples, and making apple butter (which doesn't actually include any butter) is the perfect way to use up a surplus of the fruit. Plus, it's a healthy spread alternative to jams and jellies. To get her delicious recipe, read more.

Submitted by TeamSugar member Twinkle

Apple Butter
My kitchen

Apple Butter is yet another item you can't find in Finland, so I figured out how to make my own. Makes the house smell amazing too!

Ingredients

5 1/2 pounds apples - peeled, cored and sorta chopped
1 cup sugar
1 cup brown sugar
2 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt

Directions
Peel, core and chop your apples. Don't worry too much about the chopping part because they will cook down and you can blitz them later with a hand mixer. Toss all the ingredients into a heavy pot or slow cooker. Cover and cook on medium high heat for the first hour. Then turn the heat down to low for 8 to 10 hours. Take the cover off, blitz until smooth and turn the heat back up to medium high for another hour or until most of the liquid is gone. Spoon into jars or freezable containers and pop in the fridge or freezer. Enjoy!

* Makes enough to fill 3 to 4 medium size jars.

Ingredients (minus salt)

Toss it in a pot.

Mix it.

Let it simma down nah.

Blitz it.

Eat it.

I got this recipe in my email this afternoon and I KNEW I had to make it just as soon as I had the chance, it sounded so good! Well, the chance just so happen came up tonight when my sister invited me over for dinner (I think she is feeling sorry for me since the husband is still out of town). Anyway, here's the basics:
2 cans crescent rolls. I used Pillsbury 8 count cans in original flava.
2 apples. I used green apples, I believe they were Granny Smith.
2 sticks butter. I don't skimp, the recipe says you can use margarine, but what's the point anyway?
2 cups sugar.
2 tsp. cinnamon.
1 can Mountain Dew.

Preheat oven to 350 degrees.
Core and slice apples (I removed the skins as well).
Wrap each in a crescent triangle. I basically just tried my best to get every inch of the apple covered by the dough.
Line up in a 9x13 inch pan.
Melt butter, cinnamon, and sugar together. I just nuked the butter and then stirred in the sugar and cinnamon until it had a pretty smooth, pourable consistency.
Pour the Dew around the perimeter of the pan.
Bake 45 minutes.
Eat warm with a scoop, or 3, of vanilla ice cream.

The apple slices wrapped in the crescent dough.

2 cups o' sugar

Butter, sugar, and cinnamon

Do the Dew!

Before the oven

After the oven.

I was looking through the posts on the Food and Entertaining Channel and came across a cake that I thought a lot of you would enjoy. TeamSugar member elleisa recently shared her recipe for a simple Cinnamon Apple Cake. You might enjoy it because it whips up in absolutely no time. It's basically a yellow cake mix with apple pie filling baked into it. Sometimes delicious doesn't have to be gourmet! To check out the recipe, read more.
Cinnamon Apple Cake
Submitted by TeamSugar member elleisa

I threw together this recipe when I was craving for an apple pie but also wanted cake. The apple filling starts out on top but sinks to the bottom while it is baking. Super yummy!

Ingredients:
1 box yellow cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 21 oz. can Comstock Apple Pie Filling

Heat oven to 350 degrees for shiny metal or glass pan or 325 degrees for dark or nonstick pan.
Grease bottom only of 13x9 pan and sprinkle lightly w/cinnamon.
Mix butter yellow cake mix as directed on back of box.
Spread cake batter in pan.
Spoon apple pie filling on top of cake batter.
Sprinkle crumb topping on top of apple filling. (recipe @ bottom)
Bake for 30 - 35 minutes or until toothpick inserted in center comes out clean.

Crumb topping:
4 tablespoons softened unsalted butter
6 tablespoons flour
2 tablespoons brown sugar

Mix together with fork until crumbly.

Before:After:

Print recipe with images | without images
