Why? Because they require virtually no work. All you have to do is throw them in the oven and wait. &lt;/p&gt;
&lt;p&gt;Because of the special and flavorful topping - bacon! Brussels sprouts! sour cream! - this recipe, however, involves a small amount of cooking. &lt;/p&gt;

&lt;p&gt;4 large baking potatoes&lt;br /&gt;
12 slices bacon&lt;br /&gt;
8 to 10 fresh sage leaves, roughly torn&lt;br /&gt;
3/4 cup golden raisins&lt;br /&gt;
2 cups Brussels sprouts&lt;br /&gt;
1/2 cup sour cream&lt;br /&gt;
kosher salt&lt;br /&gt;
freshly ground black pepper
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 375° F.&lt;/li&gt;
&lt;li&gt;Wash and dry the potatoes, then prick them all over with a fork. Set on middle rack of oven and bake 1 hour, or until the potatoes feel soft when gently squeezed and the skin is crispy.&lt;/li&gt;
&lt;li&gt;In a medium frying pan, over medium heat, cook the bacon until just crisp. Drain on paper towels and set aside.&lt;/li&gt;
&lt;li&gt;Discard all but 1/4 cup of the bacon fat and return the pan to the burner over medium heat. Add the sage and sauté until just sizzling. Add the raisins and Brussels sprouts and stir until warm.&lt;/li&gt;
&lt;li&gt;Slice the top of each potato down the center lenghtwise and squeeze gently to loosen the inside. Spoon some of the Brussels sprout mixture over each potato and lay 3 slices of the bacon on top. Add a dollop of the sour cream to each and sprinkle with the salt and pepper.&lt;/li&gt;

&lt;li&gt;Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces; flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.&lt;/li&gt;
&lt;li&gt;Roll each covered ball in peanut mixture; gently pat mixture completely onto balls. On ungreased large cookie sheets, place balls 2 inches apart. &lt;p&gt;Omigod, you guys.&lt;/p&gt;
&lt;p&gt;I made these potatoes last night when we had friends over for dinner and they were freakin&#039; AWESOME.&lt;/p&gt;
&lt;p&gt;Seriously, go make them, right now.&lt;/p&gt;
&lt;p&gt;INGREDIENTS:&lt;/p&gt;
&lt;p&gt;4 large russet potatoes&lt;br /&gt;
1/2 cup sour cream&lt;br /&gt;
1 cup diced american cheese&lt;br /&gt;
1 cup grated cheddar cheese&lt;br /&gt;
1 lb. bacon&lt;br /&gt;
1/2 cup diced red onion&lt;br /&gt;
1/2 cup diced yellow onion&lt;br /&gt;
4 scallions, chopped&lt;br /&gt;
1/4 cup milk&lt;/p&gt;
&lt;p&gt;PREPARATION:&lt;/p&gt;
&lt;p&gt;Heat the oven to 400 degrees, bake the potatoes for one hour or until soft&lt;br /&gt;
Meanwhile, dice the bacon and sautee in a large pan until cooked through. Remove the bacon, reserving the fat.&lt;br /&gt;
Cook the red and yellow onions in the bacon fat until soft. Set bacon and onions aside.&lt;br /&gt;
When the potatoes are cooked through, remove them from the oven and let sit a few minutes until cool enough to handle.&lt;br /&gt;
Once they are cool, cut the potatoes in half lengthwise and scoop the pulp into a large bowl. Reserve 4 halves as &quot;shells&quot; (don&#039;t scoop them TOO close to the skin or they won&#039;t hold the filling.&lt;br /&gt;
Add the sour cream and milk to the potato pulp and mix well (I used a potato masher, if you want it smoother I suppose you can use a mixer).&lt;br /&gt;
Add the American cheese, most of the bacon (reserve some), and the sauteed onions into the pulp mixture and mix well.&lt;br /&gt;
Spoon the mixture into 4 potato shells, Fill them so that they are mounded, not flat.&lt;br /&gt;
Put back in the oven and bake for 30 minutes.&lt;br /&gt;
Sprinkle cheddar cheese, remaining bacon, and scallions on the top of the potatoes and bake for 5 more minutes.&lt;/p&gt;

&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 350F. Spray deep 10-inch pie plate with nonstick cooking spray, and dust with breadcrumbs.&lt;/li&gt;
&lt;li&gt;Bring large saucepan of lightly salted water to a boil, and cook pasta about 10 minutes, or until tender. Drain, and set aside in large mixing bowl.&lt;/li&gt;
&lt;li&gt;Trim off any tough ribs at base of each cabbage leaf, and cook leaves in boiling water about 5 minutes, or until tender. Remove from water, drain, and pat dry with paper towels.&lt;/li&gt;
&lt;li&gt;Line pie plate with cabbage leaves, using scissors to trim leaves evenly along rim of dish. Make sure to overlap leaves so they completely cover bottom.&lt;/li&gt;
&lt;li&gt;Combine cooked pasta, chopped tomatoes, olives, capers, garlic, olive oil, sweet basil and pepper in large mixing bowl, and toss together. Place pasta mixture into lined pie plate, and pat down firmly with wooden spoon or spatula.&lt;/li&gt;
&lt;li&gt;Cut tomato into thin slices, and arrange evenly over top of filling. Scatter grated cheese evenly over tomatoes.&lt;/li&gt;
&lt;li&gt;Bake 30 minutes. Remove from oven, and cool on rack. Garnish with minced parsley, and serve at room temperature.&lt;/li&gt;

Using pumpkin not only gives these muffins a distinctly autumnal flavor, it keeps the muffins moist without a lot of fat. I added oatmeal for extra fiber and dark chocolate chips for a little extra zip. My daughters love them and they make for a quick but surprisingly filling breakfast - the perfect snack before heading out on a long bike ride offering five grams of protein and 4 grams of fiber. 1 1/2 cups old fashioned oats&lt;br /&gt;
3/4 cup brown sugar&lt;br /&gt;
1 teaspoon baking powder&lt;br /&gt;
1/2 teaspoon baking soda&lt;br /&gt;
1 teaspoon cinnamon&lt;br /&gt;
1/2 teaspoon ground ginger&lt;br /&gt;
1/4 teaspoon allspice&lt;br /&gt;
1/4 teaspoon ground nutmeg&lt;br /&gt;
1 1/2 cups canned pumpkin&lt;br /&gt;
3 tablespoons canola oil&lt;br /&gt;
one large egg&lt;br /&gt;
one large egg white&lt;br /&gt;
1/4 cup lowfat milk&lt;br /&gt;
1/2 cup dark chocolate chips (optional)&lt;br /&gt;
1/2 cup chopped walnuts (optional)
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Preheat oven to 375 degrees F and line muffin tin with muffin cups.&lt;/li&gt;
&lt;li&gt;Whisk dry ingredients and spices together in a large bowl.&lt;/li&gt;
&lt;li&gt;Add pumpkin, oil, milk, and egg and egg white to a medium size bowl and mix thoroughly. Add wet ingredients to dry ingredient and mix well. Stir in chocolate chips and walnuts.&lt;/li&gt;
&lt;li&gt;Fill muffin cases evenly and bake for 18 to 25 minutes&lt;/li&gt;
