&lt;li&gt;Preheat the oven to 350°. Grease a 9-by-13-inch baking dish.&lt;/li&gt;
&lt;li&gt;In a medium bowl, using your fingers, combine 3 cups flour, the brown sugar and 1/2 teaspoon salt. Mix in all but 2 tablespoons butter until large crumbs form; set aside.&lt;/li&gt;
&lt;li&gt;In a small bowl, whisk together the remaining 2 tablespoons butter, the egg and the buttermilk.
&lt;/li&gt;
&lt;li&gt;In a medium bowl, stir together the remaining 1 1/2 cups flour, the granulated sugar, baking powder and remaining 1/2 teaspoon salt. Add the egg mixture and stir to form a thick, smooth batter.&lt;/li&gt;
&lt;li&gt;Fold about a third of the reserved crumb mixture into the batter; spread evenly into the prepared baking dish.&lt;/li&gt;
&lt;li&gt;Scatter the cherries over the batter; sprinkle the remaining crumb mixture on top. Bake the cake until golden brown, 35 to 40 minutes. Transfer to a rack to cool for about 20 minutes before serving.&lt;/li&gt;

If you&#039;re like me and can&#039;t decide wether you want to host a brunch or a dinner (both are quintessentially Easter) take a look at each of my menus and choose the one you like better. Let&#039;s start this morning with the brunch menu. Don&#039;t go crazy with too many hard-to-make breakfast foods like personalized omelets. Keep it simple with make-the-night-before dishes such as poached egg brioche and maple glazed bacon (the bacon can cook in the oven while you shower). For the recipes, read more&lt;/p&gt;

12 brioche slices, lightly toasted&lt;br /&gt;
12 thin slices Canadian bacon or smoked ham&lt;br /&gt;
12 slices tomato (from 2 to 3 tomatoes)&lt;br /&gt;
12 thin slices red onion (from 1 medium onion)&lt;br /&gt;
3/4 cup grated Cheddar cheese (about 3 ounces)&lt;br /&gt;
3/4 cup grated Swiss cheese (about 3 ounces)&lt;br /&gt;
Paprika for garnish (optional)&lt;/p&gt;
&lt;ol&gt;Preheat broiler. Line 13- by 9-inch baking dish (or large rimmed baking dish) with aluminum foil.&lt;/li&gt;
&lt;li&gt;Over high heat, bring large pot of water to boil, then reduce heat to medium. Crack 4 eggs, 1 at a time, into simmering water. Poach until whites are set but yolks are still soft, about 3 minutes. Using slotted spoon, carefully transfer to paper-towel-lined plate to drain. Poach remaining eggs, 4 at a time.&lt;/li&gt;
&lt;li&gt;In baking dish, place 12 brioche slices. Top each with 1 slice Canadian bacon, 1 slice tomato, 1 slice onion, and 1 (or 2 if using small eggs) poached egg.&lt;/li&gt;
&lt;li&gt;Sprinkle each with 1 tablespoon Cheddar and 1 tablespoon Swiss cheese.&lt;/li&gt;
&lt;li&gt;Broil until golden brown, about 3 to 4 minutes. Sprinkle each egg with paprika and serve immediately.&lt;/li&gt;
&lt;li&gt;Can be prepared in advance and placed under broiler for 3 to 4 minutes before serving.&lt;/li&gt;
&lt;/ol&gt;

&lt;p&gt;3/4 pound thick-cut smoked bacon (16 slices)&lt;br /&gt;
1 to 2 tablespoons good maple syrup&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Preheat the oven to 400 degrees F.&lt;/li&gt;
&lt;li&gt;Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown.&lt;/li&gt;
&lt;li&gt;Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown.&lt;/li&gt;
&lt;li&gt;Transfer the bacon to a plate lined with paper towels and serve warm.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serve 4-8.&lt;/p&gt;

&lt;p&gt;There are many different types of gin fizzes. The simplest version combines gin, lemon juice, sugar, and carbonated water. The &lt;a href=&quot;http://www.epicurious.com/articlesguides/drinking/cocktails/ginfizz&quot; target=&quot;_blank&quot;&gt;Ramos Gin Fizz&lt;/a&gt;, a New Orleans classic, dates back to 1888, and jazzes up the recipe by adding lime juice, cream, orange flower water, and egg white.  &lt;/p&gt;
&lt;p&gt;My great uncle has perfected his variation to include gin, sugar, cream, lime juice, orange juice, soda water, ice, and one whole egg. The egg made me a little nervous, but it adds a fabulous texture and frothiness to the blended drink. If you don&#039;t want to use raw eggs, substitute powdered egg white. &lt;/p&gt;

&lt;p&gt;8 ounces Gin (I used Bombay Sapphire)&lt;br /&gt;
2 ounces fresh lime juice&lt;br /&gt;
2 ounces orange juice&lt;br /&gt;
1 whole egg&lt;br /&gt;
4 ounces cream&lt;br /&gt;
5 teaspoons sugar&lt;br /&gt;
8 ounces club soda&lt;br /&gt;
ice
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Blend gin, lime juice, orange juice, egg, cream, sugar, and ice in a blender until smooth.&lt;/li&gt;
&lt;li&gt;Divide among 4 festive glasses. Float 2 ounces of club soda on top of each cocktail and stir to combine. Add a straw and enjoy!&lt;/li&gt;

1 1/2 cups granulated sugar&lt;br /&gt;
3 extra-large eggs at room temperature&lt;br /&gt;
1 1/2 teaspoons pure vanilla extract&lt;br /&gt;
1 1/4 cups sour cream&lt;br /&gt;
2 1/2 cups cake flour (not self-rising)&lt;br /&gt;
2 teaspoons baking powder&lt;br /&gt;
1/2 teaspoon baking soda&lt;br /&gt;
1/2 teaspoon kosher salt&lt;br /&gt;
&lt;b&gt;For the streusel&lt;/b&gt;:&lt;br /&gt;
1/4 cup light brown sugar, packed&lt;br /&gt;
1/2 cup all-purpose flour&lt;br /&gt;
1 1/2 teaspoons ground cinnamon&lt;br /&gt;
1/4 teaspoon kosher salt&lt;br /&gt;
3 tablespoons cold unsalted butter, cut into pieces&lt;br /&gt;
3/4 cup chopped walnuts, optional&lt;br /&gt;
&lt;b&gt;For the glaze&lt;/b&gt;:&lt;br /&gt;
1/2 cup confectioners&#039; sugar&lt;br /&gt;
2 tablespoons real maple syrup&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Preheat the oven to 350 degrees F. Grease and flour a 10-inch tube pan.&lt;/li&gt;
&lt;li&gt;Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment for 4 to 5 minutes, until light.&lt;/li&gt;
&lt;li&gt;Add the eggs 1 at a time, then add the vanilla and sour cream.&lt;/li&gt;
&lt;li&gt;In a separate bowl, sift together the flour, baking powder, baking soda, and salt. With the mixer on low, add the flour mixture to the batter until just combined.&lt;/li&gt;
&lt;li&gt;Finish stirring with a spatula to be sure the batter is completely mixed.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For the streusel&lt;/b&gt;, place the brown sugar, flour, cinnamon, salt, and butter in a bowl and pinch together with your fingers until it forms a crumble. Mix in the walnuts, if desired.&lt;/li&gt;
&lt;li&gt;Spoon half the batter into the pan and spread it out with a knife. Sprinkle with 3/4 cup streusel. Spoon the rest of the batter in the pan, spread it out, and scatter the remaining streusel on top. Bake for 50 to 60 minutes, until a cake tester comes out clean.&lt;/li&gt;
&lt;li&gt;Let cool on a wire rack for at least 30 minutes.&lt;/li&gt;
&lt;li&gt;Carefully transfer the cake, streusel side up, onto a serving plate.&lt;/li&gt;
&lt;li&gt;Whisk the confectioners&#039; sugar and maple syrup together, adding a few drops of water if necessary, to make the glaze runny. Drizzle as much as you like over the cake with a fork or spoon.&lt;/li&gt;
&lt;/ol&gt;

&lt;li&gt;Line up 4 parfait, white wine, or other tall glasses.&lt;/li&gt;
&lt;li&gt;Spoon 2 tablespoons of yogurt into each glass and smooth surface.&lt;/li&gt;
&lt;li&gt;Spoon 2 tablespoons of granola overtop and smooth surface.&lt;/li&gt;
&lt;li&gt;Spoon 2 tablespoons of fruit overtop and smooth surface.&lt;/li&gt;
&lt;li&gt;Repeat the process, adding a bit of honey here and there, to taste.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serves 4.&lt;/p&gt;

2 small ripe melons&lt;br /&gt;

2 bunches grapes&lt;br /&gt;

1 pint raspberries&lt;br /&gt;
1 pint strawberries&lt;br /&gt;
1 pint blueberries&lt;br /&gt;
1 red papaya
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Begin the platter with a base of ripe, colorful, sliced melons and pineapple--for example, cantaloupe, honeydew, Galia, or Cavaillon melons, plus the new &quot;golden&quot; pineapples. Peel the outside of a whole melon, cut it in half through the stem end, and scoop out the seeds. Place the melon halves cut side down on a board, and slice them straight across into 1/2-inch-thick slices. Fan each half-melon out slightly and arrange it on the platter.&lt;/li&gt;
&lt;li&gt;Next, cut off the top and bottom of the pineapple, peel the outside, and use a sharp knife to remove the &quot;eyes.&quot; Cut the pineapple in half lengthwise and remove the core by cutting a &quot;V&quot; down the center of each half. Again, place the pineapple halves, cut side down, on a board and slice them straight across into 1/2-inch-thick slices. Fan the slices out and arrange them next to the melon on the platter.&lt;/li&gt;
&lt;li&gt;Once the base is set, you can add any kind of fruit that&#039;s available. Have one thing that is taller than the rest, such as a large bunch of grapes or a decoratively cut papaya, to give the platter height.&lt;/li&gt;
&lt;li&gt;Then add raspberries, strawberries, blueberries, and fresh figs in casual but organized groups. The platter can look like a bowl of M&amp;amp;M&#039;s if there are too many colors scattered with no order. Visually, your eye needs to have a focal point and to be able to see each type of fruit.&lt;/li&gt;
&lt;li&gt;After all the fruit is arranged, add flat green leaves around the outside of the fruit, to set off the colors. Use lemon and galax leaves from your florist, or fig leaves and grape leaves from your garden. Make sure they are pesticide-free and well washed.&lt;/li&gt;
&lt;li&gt;Any kind of fruit will work well on this platter. For special occasions, add persimmons, kiwi, passion fruit, Queen Anne cherries, fresh apricots, and mangos. Choose whatever is colorful and seasonal.&lt;/li&gt;
