Simple Substitution For Buttermilk

I was at my vacation house when an intense craving for homemade waffles hit. Since it was snowing heavily, we had to make waffles with the ingredients in the kitchen. The recipe called for buttermilk, and rather than find another recipe, I decided to make the simple substitution for buttermilk that is a combination of milk and lemon juice.

Here's the easy recipe:

Place a tablespoon of lemon juice in a liquid measuring cup.

Add enough milk to bring the liquid up to the one-cup line.

Let stand for five minutes. Then, use as much as your recipe calls for.

I needed two cups of buttermilk, so I started with two tablespoons of fresh lemon juice and then filled it up with milk. The waffles turned out perfectly and were insanely comforting.

Have you ever used this substitution for buttermilk?

Fast & Easy Dinner: Warm Salmon Salad With Crispy Potatoes

While everyone has purchased a rotisserie chicken or cooked chicken breasts from a market's deli, few people have applied the same technique to salmon fillets. However, most supermarkets carry a section with premade foods where cooked salmon is a staple.

Use the salmon to make this healthy meal in minutes. The flaked salmon is combined with a warm shallot buttermilk sauce before being placed on a bed of crisp arugula and crunchy potatoes. Sound enticing? Wait till you see the recipe: read more.

Warm Salmon Salad With Crispy Potatoes
From Eating Well

Ingredients

2 tablespoons extra-virgin olive oil, divided
2 small yellow-fleshed potatoes, such as Yukon Gold, scrubbed and cut into 1/8-inch slices
1/2 teaspoon salt, divided
1 medium shallot, thinly sliced
2 teaspoons rice vinegar
1/4 cup buttermilk
2 7-ounce cans boneless, skinless salmon, drained or 2 7-ounce cooked salmon fillets
4 cups arugula

Directions

Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add potatoes and cook, turning once, until brown and crispy, 5 to 6 minutes per side. Transfer to a plate and season with 1/4 teaspoon salt; cover with foil to keep warm.

Combine the remaining 1 tablespoon oil, 1/4 teaspoon salt, shallot and vinegar in a small saucepan. Bring to a boil over medium heat. Remove from the heat and whisk in buttermilk.

Place salmon in a medium bowl and toss with the warm dressing.

Divide arugula among 4 plates and top with the potatoes and salmon.

Treat Your Valentine to Triple-Chocolate Bread Bites

With Valentine's Day around the corner, I wanted to get a head start on finding the perfect recipe for my sweetie. Looking through my cookbooks, one caught my eye as the ideal place to start - The Wine Lover's Dessert Cookbook. This book is dedicated to creating delicious desserts that accompany a variety of different wines. While I drooled over many, I decided to experiment with the triple-chocolate buttermilk loaf cake. After seeing the Bites of Love series on lilsugar, instead of baking a loaf, I divided the batter into mini muffin tins to create a dainty two-bite dessert. Chocoholics will be in heaven with the complex and rich flavor of three different types of chocolate: dark chocolate, semisweet chips, and cocoa powder. These moist bread bites would be superb with a bold red wine or ruby port. If you and your honey don't drink wine, these minicakes would be romantic at breakfast with a cup of coffee. To get started on these irresistible triple-chocolate bread bites, read more.

Triple Chocolate Bread Bites
Adapted from The Wine Lover's Dessert Cookbook

Ingredients

1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup of sugar
1/2 teaspoon pure vanilla extract
3 large eggs
2 ounces dark chocolate melted and cooled to room temperature
1 cup buttermilk
1/2 cup semisweet chocolate chips

Directions

Preheat the oven to 350°F. Generously butter and flour mini muffin tin

Sift together flour, cocoa, baking powder, baking soda, salt. Set aside.

Beat together the butter, sugar, and vanilla at medium speed using a standing mixer or electric mixer until very creamy, about 4 minutes.

Add the eggs, one at time, incorporating each completely before adding the next and scraping down the bowl between additions. Add the melted dark chocolate and beat to combine.

Beat in half of the flour mixture, then the buttermilk, then the remaining flour, mixing each time just until all ingredients are incorporated. Stir in chocolate chips.

Fill each mini muffin 3/4 full. Bake for 12-15 minutes until a toothpick inserted in the center emerges clean. Wait a couple minutes before removing. Once removed, allow to cool on a cooling rack.

Makes one loaf or approximately 72 mini muffins.

Jalapeno Biscuits Are Scrumptious and Spicy

On a recent trip to Las Vegas, I had brunch at Bobby Flay's Mesa Grill. While my entire meal was delicious, I especially enjoyed the variety of breads that accompanied the breakfast. There was crunchy coffee cake, dried fruit-tequila scone, and my absolute favorite: bite-sized jalapeno biscuits. The flaky biscuits were spicy without being overpowering; a perfect balance of heat. I loved them so much I decided to experiment with a homemade re-creation. These scrumptious and easy-to-make biscuits were similar to the ones I ate at the restaurant. They would be a perfect accompaniment to a big bowl of chili or a hearty black bean soup. If you are sensitive to spiciness, be sure to remove all of the seeds and white membrane from the jalapeno. To get started on your own spicy buttermilk biscuits, read more.

Jalapeno Buttermilk Biscuits
Adapted from Bobby Flay Black Pepper Biscuits

Ingredients

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into small pieces, plus 2 tablespoons, melted
3/4 cups cold buttermilk
1/4 cup heavy cream
1 jalapeno diced, remove seeds and white membrane

Directions

Preheat oven to 450°F. Combine flour, baking powder, baking soda, and salt in a large bowl. Using a dough cutter, combine until ingredients are incorporated.

Scatter the cold butter pieces over the top of the flour mixture and continue to combine until the mixture resembles coarse meal. Add the jalapeno and buttermilk and pulse until the mixture just begins to come together.

Scrape the dough onto a lightly flour counter. Pat the dough into a 10-by-12-inch rectangle about 3/4-inch thick. Use a round cutter or glass with the rim dipped in flour to cut out biscuits. Press together the scraps of dough, and repeat process.

Place the biscuits on baking sheets lined with parchment paper; brush the tops with cream. Bake the biscuits for 10 to 12 minutes or until lightly golden brown. Remove from the oven and brush the tops with melted butter.

Makes 20 biscuits.

Monday's Leftovers: Buttermilk Baked Chicken

Ask anyone who knows me: Fried chicken is one of my favorite indulgences in life. Unfortunately, the key word here is "indulgence," meaning I don't allow myself to have it at every whim (e.g., daily).

I could foresee myself enjoying this buttermilk baked chicken on a regular basis. The recipe, which is the perfect use of leftover chicken legs, is texturally similar to fried chicken, sans the grease. To prepare this simple recipe tonight, read more.

Buttermilk Baked Chicken
From Everyday Food

Ingredients

Vegetable oil, for baking sheet
8 slices white bread
1 cup buttermilk
1 teaspoon hot-pepper sauce
Salt and pepper
3/4 cup grated Parmesan cheese (2 1/2 ounces)
1 teaspoon dried thyme
4 pounds chicken parts (preferably legs, thighs, and wings), rinsed and patted dry

Directions

Preheat oven to 400 degrees. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.

In a large bowl, stir together buttermilk, hot-pepper sauce, 3/4 teaspoon salt, and 1/2 teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.

Place chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet. Leave enough space between the chicken pieces so that they crisp evenly all the way around.

Bake until chicken is golden brown, about 35 minutes.

Serves 4.

Come Party With Me: Kentucky Derby - Dessert

Keeping up with the Southern style dinner menu, serve guests a classic down home dessert at your Kentucky Derby party. A buttermilk pie has a creamy, buttery filling with a slight tang from fresh lemon juice. It's a humble, but incredibly delicious dessert.

Purchase authentic Bourbon balls and offer guests a chocolate alternative to the buttermilk pie. For the pie recipe, read more.

Buttermilk Pie
From Robert Stehling via the New York Times

Ingredients

6 tablespoons unsalted butter, at room temperature
1 cup sugar
2 large eggs, separated
3 tablespoons all-purpose flour
1 tablespoon lemon juice, more to taste
½ teaspoon freshly grated nutmeg
¼ teaspoon salt
1 cup buttermilk, at room temperature
1 8-inch deep-dish pie crust, blind-baked until very lightly browned.

Directions

Heat oven to 350 degrees.

In an electric mixer fitted with a whisk attachment, combine butter and sugar until well blended.

Add egg yolks and mix well. Add flour, lemon juice, nutmeg and salt.

Add buttermilk in a thin stream until blended. Set aside.

In another bowl, whisk egg whites until they form soft peaks. Pour about ¼ cup buttermilk mixture into egg whites and fold gently by hand to combine.

Pour egg white mixture into buttermilk mixture and fold gently until just combined. Mixture will be somewhat lumpy.

Pour filling into baked pie shell. Bake in middle of oven until filling is lightly browned and barely moves when pie is jiggled, 45 to 50 minutes. If you have added more than one tablespoon of lemon juice, it may take longer for pie to brown, so bake 5 to 10 minutes longer, if desired. If edge of crust browns too quickly, cover with foil. Cool on a rack and serve warm or at room temperature. Refrigerate leftovers.

Serves 6-8.

Theirs vs. Mine: Buttermilk Cookies

The January issue of Gourmet magazine has been sitting on my counter for weeks. More accurately, the recipe for buttermilk cookies has been on my counter for weeks. They just looked so simple and charming, I knew I'd have to make them some day. Well, thankfully that day finally arrived. The cookies, which are inspired by Edna Lewis, have a slight lemon taste to them and are coated with a simple vanilla glaze. When I made my batch, I coated some in vanilla glaze and some in chocolate. These cookies were spongy and delicious, and they're definitely working their way into my regular cookie repertoire. To check out the recipe for yourself, read more.

Buttermilk Cookies
From Gourmet, January 2008

3 cups all-purpose flour
1 teaspoon grated lemon zest
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 sticks unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
2/3 cup well-shaken buttermilk

For Glaze
1 1/2 cups confectioners sugar
3 tablespoons well-shaken buttermilk
1/2 teaspoon pure vanilla extract

Preheat oven to 350°F with rack in middle. Butter 2 large baking sheets.

Whisk together flour, zest, baking soda, and salt.

Beat together butter and sugar in a large bowl with an electric mixer until pale and fluffy. Add eggs 1 at a time, beating well after each addition, then beat in vanilla. Mix in flour mixture and buttermilk alternately in batches at low speed, beginning and ending with flour mixture, until smooth.

Drop level tablespoons of dough about 1 1/2 inches apart onto baking sheets. Bake, 1 sheet at a time, until cookies are puffed and edges are golden, 12 to 15 minutes per batch. Cool cookies on sheets 1 minute, then transfer cookies to racks.

Whisk together all glaze ingredients and brush onto tops of warm cookies. [Note, you should sift the confectioners sugar first.]

Let stand until cookies are completely cooled and glaze is set.

Note: After I glazed 2/3 of the cookies with the vanilla glaze, I whisked cocoa powder in to the glaze (you can do this to taste) and used that on the rest of the cookies.

It's good to have a few blank canvas dessert recipes in your repertoire. By blank canvas, I mean desserts that are easy to make, may be prepared in advance, and can be creatively added to. For example, these buttermilk puddings are delicious alone, but are effortlessly jazzed up with a caramel sauce, fresh fruit, syrups, candies, or just about anything that floats your fancy! For a perfect Halloween dessert, use melted chocolate to give these individual puddings ghost faces or spider webs. With this dessert the possibilities are endless, so get the recipe, read more

What Can Take the Place of Buttermilk?

Last week I tried to make cinnamon rolls and the recipe called for 1 1/2 cups of buttermilk, unfortunately I only had 1 cup in my house. Since I was in my pajamas and the weather wasn't exactly hospitable, I decided that there was no way I was going out to the store. However, I was already halfway through the recipe (I really thought I had everything before I started) and needed a solution quick!

So I poured through a bunch of food science and cooking tip books and was able to find a few good substitutions that ended up saving the day.

1 cup of buttermilk can be substituted with:

1 tbsp vinegar (or lemon juice) plus milk to equal 1 cup. Stir and let stand for 5 minutes.

or

1 3/4 tsp cream of tartar plus 1 cup of milk

I also learned that for baking you can use:
1/4 cup buttermilk powder plus 1 cup of water.
Remember to mix the powder with dry ingredients and water with wet.
I personally haven't tried buttermilk powder, but think it could be handy to keep on hand - once opened it will keep in the fridge for a year.

Fast & Easy Dinner: Spicy Pork Salad and Buttermilk Dressing

Normally when one thinks of a Southwestern-style salad, chicken or beef comes to mind. However, this creative recipe features the juicy deliciousness of pork tenderloin.

It's rubbed with chipotle chile powder before being broiled in the oven. The chopped salad includes chunks of pepper Jack cheese, tomatoes, and corn. A quick, creamy dressing is a simple combination of low-fat buttermilk and mayonnaise.

To enjoy this crunchy, filling dinner salad, read more.

Spicy Pork Salad and Buttermilk Dressing
From Everyday Food

Ingredients

1/2 teaspoon chipotle chile powder
Coarse salt and ground pepper
1 pork tenderloin (about 1 pound)
1/2 cup low-fat buttermilk
3 tablespoons light mayonnaise
2 scallions, whites minced and greens thinly sliced, separated
1 garlic clove, crushed through a press
1 head romaine lettuce (1 1/4 pounds), trimmed and chopped
1 pint cherry tomatoes, quartered
1 package (10 ounces) frozen corn kernels, thawed and patted dry
2 ounces pepper Jack cheese, cubed

Directions

Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil.

In a small bowl, combine chile powder, 1 teaspoon salt, and 1/4 teaspoon pepper. Place pork on prepared baking sheet; rub with spice mixture.

Broil pork until an instant-read thermometer inserted in thickest part registers 145 degrees, 14 to 16 minutes, turning twice during cooking. Let pork rest 10 minutes, then cut into bite-size chunks.

Meanwhile, make dressing: In a large bowl, whisk together buttermilk, mayonnaise, scallion whites, and garlic; season with salt and pepper.

Add romaine, tomatoes, corn, cheese, scallion greens, and pork to the bowl. Toss to combine, and serve immediately.

Serves 4.
