Come Party With Me: All Hallow's Eve - Dessert

So you've just decided to host a Halloween party and you've got no time to plan. No matter. On Saturday afternoon, before you put on your costume, you can throw together some festive yet uncomplicated snacks and make these cupcakes. Shhh, don't tell anyone: the recipe uses a boxed yellow cake mix, meaning these mini cakes will be ready to bake in minutes. The addition of pumpkin pie spice and canned pumpkin puree, in combination with the smooth cream cheese frosting, will fool your guests into thinking you slaved for hours on these cupcakes. Garnish with a single piece of candy corn and get ready to celebrate! To check out the easy recipe, read more.

Pumpkin Cupcakes With Cream Cheese Frosting
From Real Simple

Ingredients

1 18.5-ounce box yellow cake mix (plus the ingredients called for in the package directions)
1/2 teaspoon pumpkin pie spice
1 15-ounce can pumpkin puree
2 8-ounce bars cream cheese, at room temperature
2 cups confectioners’ sugar
24 pieces candy corn

Directions

Heat oven to 350° F. Line two 12-cup muffin tins with paper liners.

Prepare the cake mix as directed but with the following change: Add the pumpkin pie spice and substitute the can of pumpkin puree for the water called for in the package directions.

Divide the batter among the prepared muffin tins and bake until a toothpick inserted into the center of a cupcake comes out clean, 18 to 22 minutes. Let cool.

Meanwhile, using an electric mixer, beat the cream cheese and sugar until creamy. Spread on the cupcakes and top each with a piece of candy corn.

Makes 24 cupcakes.

Reader Recipe: Simple Apple Cinnamon Cake

I was looking through the posts on the Food and Entertaining Channel and came across a cake that I thought a lot of you would enjoy. TeamSugar member elleisa recently shared her recipe for a simple Cinnamon Apple Cake. You might enjoy it because it whips up in absolutely no time. It's basically a yellow cake mix with apple pie filling baked into it. Sometimes delicious doesn't have to be gourmet! To check out the recipe, read more.

Cinnamon Apple Cake
Submitted by TeamSugar member elleisa

I threw together this recipe when I was craving for an apple pie but also wanted cake. The apple filling starts out on top but sinks to the bottom while it is baking. Super yummy!

Ingredients:
1 box yellow cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 21 oz. can Comstock Apple Pie Filling

Heat oven to 350 degrees for shiny metal or glass pan or 325 degrees for dark or nonstick pan.
Grease bottom only of 13x9 pan and sprinkle lightly w/cinnamon.
Mix butter yellow cake mix as directed on back of box.
Spread cake batter in pan.
Spoon apple pie filling on top of cake batter.
Sprinkle crumb topping on top of apple filling. (recipe @ bottom)
Bake for 30 - 35 minutes or until toothpick inserted in center comes out clean.

Crumb topping:
4 tablespoons softened unsalted butter
6 tablespoons flour
2 tablespoons brown sugar

Mix together with fork until crumbly.

Before:After:

What Should You Do on a Cold Rainy Day?
That's right, you should bake brownies! 'Cause I'm sure you've already got all the ingredients at home, yeah? Chocolate chips, cocoa powder, plain flour, eggs, butter . . . Okay, now you're ready to go into the kitchen! Anyway, It has been raining since morning and, you know, one gets lazy when it rains. I decided to postpone my study plans till tonight, and to stop being envious of all the bakers who'd been baking recently when I had buried myself among my books, I BAKED!

To see her decadent brownie recipe, read more

Easy Pineapple Dessert For Summer

Fast. Simple. Delicious. Dessert. When you see those 4 words, a decadent cake may not come to mind, but trust me you can make a cake in minutes if you start with a box. In the summer I can't be bothered to spend so much time in the kitchen - especially if it's hot out! With this recipe, a summer cake - best served chilled - is put together by taking help from the store in order to save time and energy - you won't even need to win a brand new mixer to whip this one up. Melt in your mouth yellow cake is topped with a pistachio-cream cheese-pineapple mixture, followed by a fluffy layer of cool whip and a dusting of chopped nuts. Sound tempting doesn't it? You'll get the recipe if you read more

'Wich of the Week: Pecan Pumpkin Cakewich

In Autumn I welcome the arrival of all things pumpkin, whether it's pumpkin lattes at Starbucks, pumpkin chocolate cookies, or pumpkin pie at Thanksgiving. So why not pumpkin sandwiches? Inspired by carrot cake with cranberries folded in, this sweet sandwich would make a great dessert or an afternoon snack with cider. Just in time for Halloween, you can make your own pumpkin bread or use a mix from a store like Trader Joe's, which is where I found the apple-cranberry chutney. Get this comfy Fall recipe now.

Cupcakes So Good They'll Make You Hum

Last week my sister hosted a Summer cocktail party that doubled as a birthday celebration for two friends. Since I've been known to make birthday cakes in the past, she asked me if I could do two cakes for the party. Immediately I began to worry: baking and assembling two cakes requires a lot of time. Just as I was starting to panic, I remembered the ingenious invention that is the cupcake! Each birthday girl could get her own minicake topped with a candle. Inspired by our slideshow of unconventional cupcake recipes, I decided to make hummingbird cupcakes. A native to the South, hummingbird cake is a cream cheese-frosted white cake with crushed pineapple, coconut, mashed bananas, and walnuts mixed into the batter. It's sweet, moist, fruity, crunchy, creamy, and divine - quite simply, it's everything you want in a cupcake. Although the pineapple topping is extra work, it's worth it. The cupcakes wouldn't be the same without the feathery juicy dried pineapple. To take a look at the recipe I used, read more.

Hummingbird Cupcakes
From Martha Stewart

Ingredients

3 cups all-purpose flour, plus more for pan
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, melted and cooled
2 teaspoons pure vanilla extract
2 cups sugar
3 large eggs
2 cups mashed ripe banana (about 3 large)
1 can (8 ounces) crushed pineapple, drained
1 cup chopped walnuts or pecans
1 cup coconut flakes
Cream Cheese Frosting, recipe below
Dried Pineapple Flowers, recipe below

Directions

Preheat oven to 350 degrees, with rack in center. Line cupcake pan with paper liners; set aside.

In a medium bowl, whisk together flour, baking soda, cinnamon, and salt; set aside.

In the bowl of an electric mixer fitted with the paddle attachment, beat butter, vanilla, and sugar until combined, about 2 minutes.

Add eggs one at a time, incorporating each before adding the next. Beat at medium speed until mixture is pale yellow and fluffy, about 3 minutes.

In a medium bowl, stir together banana, pineapple, walnuts, and coconut. Add to egg mixture, mixing until combined. Stir in flour mixture.

Divide batter evenly among liners, filling about 2/3 full. Bake, rotating pans halfway through, until golden brown and a cake tester inserted in the center comes out clean, 25 to 28 minutes.

Transfer to a wire rack to cool completely. Once cupcakes have cooled, use a small offset spatula to frost tops of each cupcake. Decorate with dried pineapple flowers, if desired. Serve at room temperature.

Makes 24 cupcakes.

Cream Cheese Frosting

8 ounces cream cheese, room temperature
1 teaspoon pure vanilla extract
1/2 cup (1 stick) unsalted butter, cut into pieces, room temperature
1 pound confectioners' sugar, sifted

In the bowl of an electric mixer fitted with the paddle attachment, beat cream cheese and vanilla until light and creamy, about 2 minutes.

With mixer on medium speed, gradually add butter, beating until incorporated.

Reduce mixer speed to low. Gradually add sugar, beating until incorporated. Use immediately, or cover and refrigerate up to 3 days. Bring to room temperature before using.

Makes 3 cups.

Dried Pineapple Flowers

2 large or 4 small pineapples, peeled

Preheat oven to 225 degrees. Line two baking sheets with nonstick baking mats or parchment paper.

Using a small melon baller, remove and discard all pineapple skin.

Using a sharp knife, cut pineapple crosswise into very thin slices. Transfer slices to baking sheets.

Bake until tops look dried, about 30 minutes. Flip slices; bake until completely dried, 25 to 30 minutes more. Pinch center of each pineapple slice to shape into a cone, and let cool in a clean egg carton to form flowers. Refrigerate in an airtight container up to 3 days.

Makes about 2 dozen.

Celebrate Summer With Ice Cream Cake

One of the first things I ever made was ice cream cake. I was 13 and decided that for my 14th birthday I wanted an ice cream cake. Instead of getting one at Baskin Robbins, my best friend and I made our own. It was a surprisingly simple and satisfying success. Essentially all you need is a boxed cake mix, a container of ice cream, and a little creativity. Since July is National Ice Cream Month, it's the perfect time for everyone to experiment with ice cream cake. To inspire you, here are a few of my favorite recipes.

Must-Read: Dinner At My Place

Over the past few months, I've been testing recipes from Tyler Florence's recent cookbook: Dinner At My Place $13.57.

Although Florence has penned several other cookbooks, this one has a particularly intimate feeling because it includes his family's favorite recipes along with great menus for dinner parties.

To find out if you should add it to your cookbook collection,
read more.

Pros:

The book is divided into innovative menus and theme parties. Some examples are Crab Season, Tolan's Birthday Dinner, and Sunday Dinner. There are a wide variety of recipes in each menu, which can be easily mixed and matched.

Many of the recipes offer substitutions in case some of the ingredients are not in season or are unavailable.

The last chapter, Cheat Sheet, has over 20 basic recipes (such as creamy parmesan potato gratin, Japanese beef broth, classic French Vinaigrette) that are fast and easy staples perfect for livening up any meal.

Cons:

Tyler is the father of three children, however, I thought it was overkill to dedicate an entire chapter to baby food. Perhaps a separate book or a smaller section? After all, I'm not making puree of anything for my adult guests anytime soon.

Directions for the recipes are in paragraph format rather than number.

Recipes: There are a wide variety of recipes in each of his pre-planned menus. Here are some that caught my attention.

Garden Puree Bruschetta

Blender Béarnaise

Watermelon Nectar with Lime Salt

Spicy Black-Eyed Pea Relish

Corn Pudding with Poblano

Artichoke Fritters with Meyer Lemon Salt

Beet Cakes with Sweet Greek Yogurt

Chinese Chicken Stock

Bourbon Peach Cobbler

Imagery: There are tons of pictures, which I promise will get you salivating.

Overall Rating: This cookbook has plenty of recipes perfect for a dinner party. It's not filled with lengthy and difficult culinary challenges, but rather tasty comfort foods that an average family is sure to enjoy.

View 6 Photos ›

Taste Test: Sprinkles Vanilla Cupcake Mix

Last week I got my hands on a container of Sprinkles vanilla cupcake mix ($14). The LA-based bakery boosts a celebrity following and is famous for its rich cupcakes topped with swirled frosting and signature modern dot. Currently, there are six bakeries sprinkled throughout the Western United States, but thanks to Williams-Sonoma, you can experience the sweetness of Sprinkles in the comfort of your kitchen. The mix comes in seven flavors: chocolate, red velvet, vanilla, lemon, pumpkin, chocolate peppermint, and banana. To find out what I thought of the vanilla variation, read more.

First off, the mix is expensive. It only makes 12 cupcakes and that doesn't include the cost of frosting ingredients. The addition of the signature modern dot is fun, but, be warned, when I opened the plastic container the dots shattered on my counter. By themselves, the dots don't taste very good either: they're chalky and bitter with no apparent taste. The recipe is straightforward and easy to follow.

The final cake is extremely dense with a strong vanilla flavor. Essentially, it tastes exactly like what it is - a gourmet cupcake made from a prepackaged mix.

The frosting was my favorite part: it's thick and creamy with a delightful flavor that's not overly sweet or too buttery.

Since I prefer to make baked goods from scratch, Sprinkles boxed mix will not become a staple in my pantry. If you prefer light, fluffy, moist cupcakes, opt for a different flavor or mix altogether. Has anyone else tried Sprinkles boxed cupcake mixes? What did you think of it?

View 17 Photos ›

Must-Read: Giada's Kitchen

Last week Giada De Laurentiis fourth cookbook, Giada's Kitchen ($32) hit bookshelves. The book release coincided with the relaunch of her website, Giadadelaurentiis.com. I was lucky enough to get my hands on a copy of the glossy hardback with Tiffany-blue interior. Yesterday I spent some time reading the book - which is full of pretty pictures and delicious-sounding recipes - to see what I thought of it, read more.

Pros:

The book is loaded with clear, tantalizing pictures. Most recipes include a picture.

At the back of the book, there's a section devoted to menu ideas. There's a bunch of different themes (Aprés-Ski, Italian Picnic, Elegant Vegetarian Dinner, etc.) with dishes from the book. The menus are carefully thought out and make me want to host one of the parties.

This is the first book where De Laurentiis devotes a chapter to (not) just-for-kids food. Many of the recipes look scrumptious!

Cons:

The recipes are written in paragraph form, without any steps, making them harder to follow. It seems more like a showy book you would read, rather than actually cook with.

The aforementioned menus section does not include page numbers. So if you want to make the Tuscan Mushrooms for a Game Day viewing party, you have to look in the index to find out what page the recipe is on.

Many of the recipes have appeared on Giada's Food Network series, so a lot of them - like this orange ricotta pound cake or this chocolate and brie panini - can be found on the Internet.

Recipes: The recipes are classic Giada with the most delicious-sounding ones being her California-Italian-style dishes. The recipes listed below are on my must-make list:

Appetizers and Cocktails - pecorino crackers, apple and thyme martini, crostata with mushrooms and pancetta

Salads and Vegetables - parmesan potato pancake, artichoke gratinata

Meat - chicken scallopini with saffron cream sauce

Desserts - hazelnut crunch cake with mascarpone and chocolate

Imagery: The pictures are beautiful. The double page snapshots of Giada performing several steps of a certain recipe are especially helpful because they demonstrate the recipe's techniques.

Overall Rating: Mixed. While I'm a huge fan of Giada and I love her recipes, the fact that many can be found online makes me wonder what is the point of a cookbook? If you collect cookbooks, I suggest you get your hands on a copy. But if you can't afford the splurge, check out Giada's recipes on FoodNetwork.com.

Have you checked out Giada's Kitchen? What did you think?
