When I was younger I used to hate eating chicken thighs. There was something about the dark meat and the bones that I didn't like. However, I've grown to love chicken thighs.

When it comes to game day eats, dips are convenient, chili is comforting, and pizza is solid, but none of them hold a candle to the reigning champion of Super Bowl snacks: fiery, vinegar-laden chicken wings.
While it's a Sunday requirement, buffalo chicken isn't the most ideal to make; even with special cooking equipment, its deep-fried preparation can be dangerous, messy, and odorous. Leave it to the king of food science, Alton Brown, to come up with an alternative cooking method for buffalo chicken.

I'm getting excited for the big game and I decided to schedule a buffalo wing practice run. It's my first time making wings from scratch, so I skipped the grocery aisle in favor of some quality time with my local butcher. Rather than waiting for him to break down the wings, I asked the butcher to show me how to cut up the chicken wings myself.

Chicken, when served with a saucy side of leeks and mushrooms, makes for a smooth-sailing weeknight supper. Use healthy skinless chicken thighs from last night's meal as the star of the dish, simmering and serving it in a white wine sauce.
Although white wine, mushrooms, and leeks are a standard flavor combination, change things up by switching out button mushrooms for Asian shiitakes and stirring in anise-tinged tarragon at the end.

Since most of you eat chicken a couple times a week, I thought I'd share a really basic slow cooker recipe that produces solid results.
This spiced carrot and chicken stew takes inspiration from the slow-braised tagines of North Africa, with flavors like cinnamon, cumin, cilantro, and golden raisins.
If you aren't crazy about chicken thighs, you can use chicken breasts.

As much as I love complex and exotic recipes, there's something to be said about simple and basic dishes like chicken with butternut squash. Neither the ingredients or cooking technique is unfamiliar. Instead this chicken is like an old friend — someone you've known forever and never tire of seeing because their company is always enjoyable.

Although I'm a fan of interesting vinegars and exotic sauces, it can be pricey to purchase a bottle of something you may only use once. That's why it's nice to look toward the juice aisle. Juice is an incredibly affordable flavoring agent — and you can drink it after you cook with it.

Instead of ordering takeout on this Friday night, stay in and whip up a healthful, but uncomplicated chicken stir-fry. How simple is this? You toss zucchini, carrots, onion, and red pepper (or whatever veggies you have on hand) in a searing hot pan to cook, then throw in boneless skinless chicken breasts.
