Can You Match The Food to The Christmas Carol?

I had such a good time taking Yum's Is It a Real Food Song or a Fake? quiz, I thought it would be fun to do a Christmas carol version! A ton of Christmas songs mention food.

I've listed the food portion of the lyrics and you have to match it to the Christmas carol. Ready to play?

Healthy Holiday Eating: Keep a Food Journal

If the thought of decadent holiday food is stressing you out already, take control and try keeping track of your holiday eating with a food journal. It seems simple, but by writing down what you're eating throughout the day, you'll develop a real awareness of what you're putting in your body. A treat here and there, if you're not keeping track, can feel like it's no big deal, but writing it down will give you a real record of what you've eaten and make it easier to judge if you really do want dessert.

As a trial, test out how food journaling works for you over Thanksgiving, and if it seems to boost your healthy eating habits, keep it going through Christmas and the New Year. Plus, you can make it even easier to keep track by using your phone to journal, or if you decide to get into it, pick up one of these inconspicuous little journals or try an iPhone app. You might just find that this is a health trick you want to stick with.

Victoria Smith's Go-To Holiday Gift Ideas

I do have a few tricks up my sleeve when it comes to holiday gifts, but I'm always impressed with what my design-savvy friends give each year. So, I decided to ask some interior design "tastemakers" for their favorite go-to presents. From designers and stylists to bloggers and shop-owners, some of the brightest stars in the design world have shared their favorite holiday gift ideas with me.

To kick things off, San Francisco-based Victoria Smith of the always-inspiring blog sfgirlbybay has shared her go-to gift ideas. But, she admits she's not a huge fan of the commercial side of Christmas: "I love the white twinkling lights, and the parties and dinner gatherings with friends - the celebrations. I do love that part."

On gifts for friends: "Most of my friends and I for years have agreed to always make our gifts for each other. Even when they sometimes don't come out quite as well as you had envisioned, we give them anyway, and just have a good laugh. From homemade pillow cases, to miniature snow domes made from baby food jars, and knit scarves, we've gone through some good gifts and some good laughs."

Hear more of Victoria's favorite go-to gift ideas.

Festive Foods: Australian Traditional Christmas Pudding

Right now, while we're all bundled up and cozy, everyone south of the equator is shedding off layers and celebrating summer. In fact, Christmas Day in Australia can often reach temperatures near 100 degrees Fahrenheit.

So while we're inside stuffing ourselves to keep warm, our friends in Australia are headed to the beach, gathering around the Christmas Bush (a native plant with red flowering leaves) and snacking down on Christmas pudding. To make your own version of a traditional Australian Christmas pudding, read more

Australian Traditional Christmas Pudding

1/2 pound plain flour
1/2 pound breadcrumbs
1 pound butter
1 pound brown sugar
1 pound currants
1/2 pound raisins
1 pound sultanas
1/2 pound citron peel
9 eggs
1 pinch salt
1/2 cup brandy
1/4 pound almonds
1/2 teaspoon all spice
1/2 teaspoon baking soda

Cream butter and sugar. Add eggs, well beaten, also brandy. Stir in all fruit and chopped blanched almonds. Add breadcrumbs, flour, soda, and spices. Bake in greased pudding basin, leaving sufficient room for rising. (The pudding can also be poured onto a piece of calico and tied securely with string.) Steam for 6 hours.

This pudding can be made ahead of time, say two or three months if wished. This recipe makes two very large puddings; It is best divided into 3 portions. A half quantity takes 3 1/2 hours to cook. For heating pudding when required, boil slowly for 2-3 hours.

Print recipe with images | without images

During the Australian gold rush days, it was tradition to put a gold nugget into the mix. These days a small surprise (you choose!) can be put inside instead. Whoever finds it is supposed to be blessed with good luck. Just let your guests know before hand, so they don't bite down and break a tooth!

Come Party With Me: Italian Christmas Eve - Menu

On Christmas Eve it's customary for Italians to consume seafood for dinner; they enjoy course after course of rich fish items. Although my family has Irish origins, I thought it would be fun to plan an Italian-style Christmas Eve - this year we'll be eating seven delicious seafood dishes. To get the party started we'll have raw oysters and cold, marinated anchovies waiting for the guests. Once a group has arrived, the hot appetizers will be set out. Spicy seared scallops are a delightful bite and slices of clam pizza are crisp and salty.

At the dining table a tuna and white bean salad will be served, followed by a silky shrimp bisque. The meal finishes with a velvety lobster pasta with cream sauce. Doesn't it sound to die for? Look at these recipes when you read more.

Spicy Seared Scallops
From Martha Stewart

Ingredients

24 sea scallops (about 1 1/2 pounds), halved
Olive-oil cooking spray
For the seasoning:
6 tablespoons all-purpose flour
1 1/2 teaspoons cayenne pepper, or more to taste
3 teaspoons ground cumin
3 teaspoons ground coriander
1 1/2 teaspoons coarse salt
3/4 teaspoon ground cardamom
For the Garnish:
One 12-inch-long daikon radish, peeled and cut into 1/4-inch-thick rounds
5 romaine lettuce leaves, very thinly sliced

Directions

Combine flour, cayenne pepper, cumin, coriander, salt, and cardamom in a small bowl. Dip each halved scallop into the flour mixture to coat; set aside.

Place daikon rounds on serving platter. Top each with shredded lettuce; set aside.

Heat a medium nonstick skillet over medium heat. Coat with olive-oil spray, add coated scallops, and sear until light golden brown and cooked through, about 1 minute per side.

Transfer each seared scallop half to a daikon round. Serve warm or at room temperature.

Makes 48.

5 tablespoons extra-virgin olive oil
1 tablespoon finely chopped garlic
Salt
1/3 cup flour, for dusting
Two 16-ounce packages refrigerated pizza dough
Two 1-pound containers frozen chopped clams, thawed and drained (about 2 1/2 cups)
4 teaspoons grated Parmesan cheese
1 tablespoon fresh thyme leaves
Pepper

Directions

Ingredients

1 pound large shrimp, peeled and deveined, shells reserved
4 cups seafood stock
3 tablespoons good olive oil
2 cups chopped leeks, white and light green parts (3 leeks)
1 tablespoon chopped garlic (3 cloves)
Pinch cayenne pepper
1/4 cup Cognac or brandy
1/4 cup dry sherry
4 tablespoons (1/2 stick) unsalted butter
1/4 cup all-purpose flour
2 cups half-and-half
1/3 cup tomato paste
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Directions

Place the shrimp shells and seafood stock in a saucepan and simmer for 15 minutes. Strain and reserve the stock. Add enough water to make 3 3/4 cups.

Meanwhile, heat the olive oil in a large pot or Dutch oven. Add the leeks and cook them for 10 minutes over medium-low heat, or until the leeks are tender but not browned.

Add the garlic and cook 1 more minute. Add the cayenne pepper and shrimp and cook over medium to low heat for 3 minutes, stirring occasionally.

Add the Cognac and cook for 1 minute, then the sherry and cook for 3 minutes longer.

Transfer the shrimp and leeks to a food processor fitted with a steel blade and process until coarsely pureed.

In the same pot, melt the butter. Add the flour and cook over medium-low heat for 1 minute, stirring with a wooden spoon. Add the half-and-half and cook, stirring with a whisk, until thickened, about 3 minutes. Stir in the pureed shrimp, the stock, tomato paste, salt, and pepper and heat gently until hot but not boiling. Season, to taste, and serve hot.

Serves 4-6.

Ingredients

3 1 3/4-pound live lobsters
3 tablespoons olive oil
1/4 cup tomato paste
2 large plum tomatoes, chopped
1/3 cup dry white wine
2 tablespoons white wine vinegar
2 garlic cloves, sliced
2 fresh tarragon sprigs
2 fresh thyme sprigs
2 fresh Italian parsley sprigs
6 cups whipping cream
1 1/2 pounds fettuccine or linguine

Directions

Bring very large pot of salted water to boil. Add lobsters. Boil until cooked through, about 12 minutes (or cook in batches, if necessary).

Using tongs, transfer lobsters to large rimmed baking sheet. Remove meat from tail and claws; place meat in medium bowl. Remove any roe from bodies and place in small bowl. Cover and chill meat and roe (if any). Remove tomalley (green matter) from bodies and discard. Reserve bodies and shells.

Heat oil in heavy large pot over high heat. Add reserved lobster bodies and shells. Sauté 3 minutes. Reduce heat to low. Add tomato paste; stir 3 minutes.

Stir in tomatoes, wine, vinegar, garlic, tarragon, thyme, and parsley. Add cream; boil 2 minutes. Reduce heat to medium-low. Simmer just until lobster flavor infuses cream, stirring occasionally, about 20 minutes.

Strain sauce into large bowl, pressing on solids to extract as much liquid as possible. Discard contents of strainer. (Lobster and sauce can be prepared 1 day ahead. Cover separately and chill.)

Transfer sauce to heavy large saucepan. Cut lobster meat into bite-size pieces; coarsely crumble roe, if using. Add to sauce. Gently rewarm over low heat, stirring occasionally.

Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain; return pasta to pot. Add sauce; toss over medium-high heat until sauce coats pasta, about 4 minutes. Season with salt and pepper. Transfer to large shallow bowl and serve.

Serves 10.

Spread Holiday Cheer With a Bûche de Noël

I've been dreaming of classic Christmas desserts, so this holiday, I thought I'd bake a bûche de Noël. Rather than opting for excessive designs and detailed accessories, I made a modern cake roll that looked (and felt) effortless. My guests couldn't get enough of the moist, light mocha sponge cake, which was a nice contrast to the sweet and nutty German chocolate filling. Impress your guests when you read more.

German Chocolate Cake Roll
From Food Network Magazine

Ingredients

1 cup evaporated milk
1 cup plus 1-1/4 cups granulated sugar
3 large egg yolks plus 3 large eggs, at room temperature
1 stick cubed butter plus 1-1/2 sticks softened butter (2-1/2 sticks or 1-1/4 cups total)
1 teaspoon plus 2 teaspoons vanilla extract (3 teaspoons total)
1-2/3 cups sweetened coconut, toasted until light brown
1 cup chopped pecans
1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsweetened cocoa powder, plus more for dusting
1 ounce bittersweet chocolate, finely chopped
1/3 cup strong hot coffee
1/3 cup buttermilk
Confectioner's sugar, for dusting

Directions

Position a rack in the center of the oven and preheat to 350ºF. Lightly grease a 13-by-18-inch jelly roll pan; line with parchment paper, letting it come up the short sides by about 2 inches. Brush the paper with oil or melted butter and lightly dust with flour.

Make the filling: Whisk the evaporated milk, 1 cup sugar, 3 egg yolks, and the cubed butter in a saucepan over medium heat. Cook, stirring constantly, until thick and creamy, about 10 minutes. Remove from heat; stir in 1 teaspoon vanilla, toasted coconut, and pecans. Set aside to cool completely, stirring occasionally.

Make the cake: Meanwhile, whisk the flour, baking soda, and salt in a medium bowl.

In another bowl, whisk the cocoa and chocolate. Add the hot coffee to the cocoa mixture, stirring until smooth; stir in the buttermilk and the remaining 2 teaspoons vanilla.

Using a mixer, beat the softened butter and remaining 1-1/4 cups sugar in a large bowl on high speed until fluffy, about 4 minutes. Reduce the speed to low; add the 3 whole eggs, 1 at a time, incorporating each one before adding the next. Add the flour mixture in 3 parts, alternating with the cocoa mixture in 2 parts, beginning and ending with the flour. Beat until just blended; if necessary, fold the batter together with a rubber spatula.

Spread the batter evenly in the prepared pan. Bake until cake springs back when pressed lightly, about 16 minutes. Cool slightly in the pan.

Run a knife around the edge and slide the cake with its paper onto a work surface. Spread the coconut filling evenly over the cake. Roll the cake from one of the short ends, pulling it away from the parchment into a tight cylinder; transfer to a platter. Cool completely and dust with the confectioners' sugar or cocoa.

Serves 8 to 12.

Experiment Shows Spiked Eggnog Might Be Safer

A recent experiment suggests spiked eggnog may be safer to drink than its PG counterpart. NPR attempted to solve the age-old mystery of whether adding alcohol to eggnog, which contains raw eggs, eliminates risk of food poisoning. To answer the question, NPR sought the help of Rockefeller University microbiologist Vince Fischetti.

Fischetti compared bacteria levels in store-bought, alcohol-free eggnog to a recipe his lab makes every year. The science team's heavily spiked version requires the mixture to sit in the refrigerator for weeks before drinking. The results? His eggnog's alcohol eliminated all bacteria. In contrast, the commercial eggnog was teeming with bacteria strains commonly found in dairy.

The microbiology lab conducted a separate experiment to see whether its alcoholic eggnog was strong enough to kill off salmonella strains. The results proved inconclusive.

Are you intrigued or disgusted by Vischetti's recipe for eggnog? Will these findings have you adding more alcohol to your eggnog this year?

Source

Come Party With Me: Tree Trimming - Drinks

The holidays are a great time to break out the old punch bowl. I'll be dusting off mine Friday for a tree-trimming party and filling it with this sparkling pomegranate punch. Made with Prosecco and no hard alcohol, this red-hued concoction is a sublime blend of pomegranate juice, fresh squeezed orange juice, and limeade. You can mix the ingredients in advance and stir in the bubbly the moment guests arrive. Since it is the holidays, consider getting a sparkling jasmine tea for those who don't drink. Also have beer, water, and eggnog on hand. To look at the punch recipe, read more.

Sparkling Pomegranate Punch
From Food and Wine

Ingredients

1 quart pomegranate juice
2 cups fresh orange juice, strained
2 cups chilled limeade
One 750-milliliter bottle Prosecco
Lime and orange slices, for garnish
Ice
1 cup pomegranate seeds

Directions

In a punch bowl, combine the pomegranate juice, orange juice and limeade.

Pour in the Prosecco; float lime and orange slices on top. Ladle into 12 ice-filled glasses, sprinkle with pomegranate seeds and serve.

Serves 12.
