The most hyped part of the Food and Wine Classic is the culinary competition that takes place on the last day of the festivities. The Classic Cook-Off pits the reigning Top Chef winner — this year it was Hung — against master French chef Jacques Pepin and his BFF Jean-Claude. The chefs were given a whole salmon, a bunch of ingredients leftover from the previous day's demos, and 18 minutes to create a dish and a cocktail.

When I told YumJimmy that we were spotlighting a new book every day in August, he told me to make sure that I mentioned Harold McGee's On Food and Cooking: The Science and Lore of the Kitchen. When it was first published over 20 years ago, it instantly became a success. Many people even consider it to be like an encyclopedia.

I have somewhat recently become totally lactose intolerant — as in, no butter, no cheese, no yogurt, and nothing dairy. I'm totally opposed to relying on drugs to allow me to eat something my body clearly doesn't want to digest, so I've been experimenting with vegan cooking.

We've always been huge fans of New York chef and restaurateur David Chang: He was Sugar's pick for Best Restaurant Chef of 2008. By fusing innovative flavor combinations and haute kitchen techniques with casual dining, the Momofuku overlord revolutionized the restaurant scene in America.
What's most refreshing about Chang, however, are his irreverent demeanor and unapologetic opinions.
