By the time the actual day of Christmas rolled around I was so over baking that I didn't want to make dessert for my own dinner. Instead of dealing with mounds of flour or cookie cutters, I just wanted to relax and watch the yule log on TV. Weeks earlier I was given a box of all-natural oatmeal chocolate chip cookie mix from Kodiak Cakes, which seemed perfect given my laziness on Christmas morning.

Full disclaimer: when it comes to dessert at Christmas, I am not one to skimp on ingredients since it comes but once a year. Since baking is such a science, I find that it's hard for cookies and cakes to come out tasting right when you start adjusting ingredients and their measurements. That being said, I do try and come up with healthier versions of cookies whenever I can.

Although Thanksgiving is all about tradition, I love to take a quintessential holiday ingredient and add a new twist to it. Cranberry sauce is essential to turkey day, but it's time to move this berry over to dessert — with a white wine and ginger infused cranberry sorbet. Normally sorbet is served between courses to cleanse the palate.

Now that everyone knows that solid packed pumpkin is nothing but 100 percent pure pumpkin, here is a delicious and unexpected Thanksgiving dessert that combines pumpkin with brownies. The spiciness of cinnamon, nutmeg, and cayenne in the pumpkin layer complements the sweetness of the rich brownie layer. I halved the original recipe and rather than bake them in a square pan, I opted to use a mini muffin pan.

After drooling over Party's amazing brownies, I knew I was going to have pull out the butter and flour and get to baking my own batch. Rather than making an uber chocolate one like she did, I opted for a peanut butter and chocolate variation. Initially, I wanted a recipe for chocolate brownies with a peanut butter swirl, but I came across the reverse — peanut butter brownies with chocolate chunks — and had to give it a try!

Everyone knows I am crazy for popsicles — there's no better way to beat the heat on a Summer day. Although avocado is generally used in savory dishes like guacamole, it is a fruit and therefore is perfect for dessert!
These avocado coconut creamsicles are surprisingly delicious and decadent.
