The hosts provided the meat, drinks, and entertainment while the guests were asked to bring an appetizer, salad, or dessert-pot luck style. As I was hitting the appetizer side of the giant flatbed (where all of the food was laid out) I discovered a super easy, totally tasty appetizer that made me wonder, why didn&#039;t I think of that? Roasted garlic with tiny croutons. Someone had roasted up a bunch of garlic heads and crisped up pieces of bread. The guests were allowed to stab a clove or two of the gooey, sweet garlic and smear it on to a piece of crusty bread. Bite-sized and delicious, I made a whole plate full of these before heading back over to my friends. This is great for feeding a crowd, a picnic potluck, or a wine tasting party at an art gallery. To roast garlic, cut about 1/4 inch off of the top of a garlic head. Place in a baking dish, drizzle with olive oil, sprinkle with salt and pepper and toss to coat. Sit garlic cut side up, cover with foil and bake at 350°F until garlic skin is golden brown and cloves are tender-about 45-55 minutes. Serve with &lt;a href=&quot;http://www.teamsugar.com/121595&quot; &gt;Croutons&lt;/a&gt; and voila, instant appetizer!&lt;/p&gt;

&lt;p&gt;Although I&#039;ve never come across a crostini I didn&#039;t like, I recently tasted the most sublimely simple, insanely scrumptious cheese crostini. 1 1/2 cups freshly grated Parmesan cheese (about 5 ounces)&lt;br /&gt;
3/4 cup finely crumbled blue cheese (about 3 ounces)&lt;br /&gt;
28 1/3-inch-thick diagonal bread slices cut from 2 sourdough baguettes&lt;br /&gt;
Olive oil&lt;br /&gt;
3/4 cup finely chopped green onions
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Combine mayonnaise, garlic, ground pepper, and cayenne pepper in medium bowl and whisk to blend. Mix in cheeses; season with salt. Can be made 2 days ahead. Cover and refrigerate.&lt;/li&gt;
&lt;li&gt;Preheat oven to 400°F. Brush 1 side of each bread slice with oil. Place oiled side down on large rimmed baking sheet.&lt;/li&gt;
&lt;li&gt;Bake bread slices until almost golden, about 5 minutes. Spread 1 generous tablespoon cheese mixture on each bread slice on sheet.&lt;/li&gt;
&lt;li&gt;Bake until cheese topping starts to bubble and toasts are golden at edges, about 10 minutes.&lt;/li&gt;
&lt;li&gt;Transfer toasts to large platter. Sprinkle with chopped green onions and serve warm. &lt;/li&gt;

&lt;li&gt;Using on/off turns, puree olive oil, 1/3 cup basil, and shallot in processor until basil and shallot are finely chopped.&lt;/li&gt;

Cut each cantaloupe wedge crosswise in half. If using large mozzarella ball, trim and cut into 6 cubes.&lt;/li&gt;

&lt;li&gt;Look for a high-quality fresh mozzarella. Bix&#039;s cheese is pulled in house making for a creamy, luscious texture. Slice into 1/2-inch thick rounds.&lt;/li&gt;
&lt;li&gt;Wrap the outside edge with a piece of proscuitto and secure in place with a decorative toothpick.&lt;/li&gt;
&lt;li&gt;Drizzle with olive oil and sprinkle with freshly ground pepper.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Voila - instant sophisticated appetizer! &lt;/p&gt;
