Summer weather is winding down, so it's time to grill as much as you can before it gets too chilly. Since I don't always have time to light up the grill after work, I like to grill up a bunch of veggies on Sunday so I'll have extra for the week. They taste great on their own, mixed with pasta, as a pizza topping, or in a sandwich.

Dear Fit,
For a few months now, I've been eating the same thing for breakfast and lunch every day. For breakfast, I eat Greek yogurt with half a cup mixed fruit and a cup of high fiber cereal. For lunch, I eat a big salad, topped with some kind of lean protein like grilled chicken, fish, or tofu.

This recipe makes ingenious use of portabello mushrooms. An all-too-expected ingredient in unsophisticated vegetarian cuisine, the portabello mushroom often replaces a burger patty. Not so with this burger.
