It's Tailgating Time! Seven-Layer Bean Dip

Tomorrow the Golden Bears (my team!) take to the football field for the first game of the year. Since football season is officially here, I thought it would be fitting to feature one of my favorite tailgating dishes: seven-layer bean dip. This game-day classic is a mixture of beans, cheese, guacamole, sour cream, tomatoes, black olives, and green onions. It's easy to make and downright delicious - thus, no tailgate table should be without it. This recipe makes use of buttery avocados (they're mashed with pickled jalapeños) and ripe tomatoes (they're tossed with diced onions) resulting in a dip that's fresh and addictive. Seven-Layer Bean Dip

Ingredients

4 tablespoons safflower oil
1 cup plus 2 tablespoons chopped onion (from 1 medium onion)
4 garlic cloves, minced
2 cans (15 1/2 ounces each) pinto beans, drained, liquid reserved
2 medium tomatoes, finely chopped
1/2 teaspoon coarse salt
2 ripe avocados, halved, pitted, and peeled
1 to 2 pickled jalapeno chiles, minced
1 cup plus 2 tablespoons sour cream
2 tablespoons fresh lemon juice
3 ounces cheddar cheese, grated (1 cup)
6 scallions, thinly sliced
6 ounces pitted black olives, chopped
1 to 2 bags tortilla chips, for serving

Directions

Heat oil in a large pan. Add 1 cup onion and the garlic, and cook over low heat until translucent, about 2 minutes.
Stir in beans, and cook for 3 minutes. Roughly mash with the back of a spoon, adding reserved liquid as needed to attain desired consistency.
Mix tomatoes with remaining 2 tablespoons onion and the salt.
Mash avocados with jalapenos, 2 tablespoons sour cream, and the lemon juice.
Spread 1/2 inch mashed beans into bottom of each jar. Top with 2 tablespoons cheddar, 1 tablespoon scallions, cup tomato mixture, 3 tablespoons avocado mixture, 2 tablespoons sour cream, then 2 1/2 tablespoons olives. Alternatively, layer all ingredients in a large bowl. Serve with chips.

Dress For Cooler Weather in Layers

In many parts of the country (and world), the weather is turning a bit cooler. This means that your early morning and evening runs can be a bit on the chilly side. One of the best ways to run prepared is by dressing in layers.

Here's my fool proof layering system that keeps me warm and dry on even the chilliest of fall nights.

Start with a light base layer. I like my base layers to be made from a wicking material since this is the layer that lies on your skin and you want to stay dry.
The next layer should be a light top. I like long sleeved but some people prefer short sleeves. This layer does not need to be made from a wicking material because hopefully layer one is taking care of that for you.
If it's really chilly, you may want to think about adding a third layer. This layer can be anything from a lightweight fleece to a windbreaker to a water resistant jacket. It's up to you how protective or warm you want to go.
Think about wearing a hat and gloves too, especially since heat leaves your body through your head and hands as well.

If you get hot, you can always remove the top layer and tie it around your waist. I know its not the most attractive look, but it does the trick.

Fit's Tip: When layering, don't go too tight or too loose. Tight layers may cause uncomfortable chaffing or sweat rash, and too loose layers will not insulate your body as well.

Trend Alert: Layered Halters

I love layering, but it gets a little tedious rummaging through my drawers for the "right" tank or tees. That why this new style, layered halters, is so clever. They take the work out of having to think about what to layer, and you'll never have to hunt through your dresser again. Even better, the styles available are more artsy and unique. Functional and phenomenal? I'll take it.

Summer of Salads: A Different Taco Salad

In the past week, San Francisco's seen some of the hottest days of the year. Which is why when a friend came over for lunch, I suggested we make a big, chilled salad with a cooling dressing to top it off. I chose taco salad: not the traditional kind with a fried tostada bowl and ground beef, but a lighter, meatless version with a creamy cilantro, cucumber, and avocado dressing.

The salad turned out beautifully. It has vibrantly hued ingredients, each neatly chopped, in contrasting layers. I especially enjoyed the flavors and textures - like buttery avocado, smoky cumin, and crispy chips - without any of the grease. Leftover chopped ingredients make for a wonderful next meal, and you can vary the dish. Remove the cheese to turn it vegan, or add grilled skirt steak if you're a meat lover. The Look For Less: Rory Beca Two Layer Skirt

There is no other way to describe this Rory Beca Two Layer Skirt ($209) than Adorable, with a capital A. I'm not easily amused by cutesy things, but the fact that it's black gives it a serious undertone. I would jump on it; the only thing is I'm trying to be a good girl and not spend too much. Lucky for me, I found a similar skirt for way cheaper.

Forever 21 is in hot water, but that's not to say it doesn't come out with stylish goods for less. This Forever 21 Candace Layered Skirt ($18) is made up of different fabric but is the same silhouette, perhaps a bit more dramatic. The only thing I would do, since the bottom layer is longer than the Rory Beca version, is to have it shortened. At that price, I can afford to do so. A simple tank and funky heels and I'll be happy.

Winter Sports: It's All About the Layers

With Winter comes a wide variety of snow sports like cross-country skiing, snowboarding, snowshoeing, as well as the unique challenge of Winter running. I hope that you are not under the delusion that just because it's cold outside, you are not going to sweat. Sweating and Winter don't mix! Once your clothes are wet, they stay wet and that will make you cold. Plus if you pile on too many layers, you won't be able to move freely, which is really frustrating.

Here's what to wear and the order to put them on:

Start with a sports bra and undies that wick away moisture. Ones made out of cotton will be really uncomfortable when you sweat.
Then you need to put on your warm, base layers. Ones made with merino wool are better for Winter sports, since they'll pull away sweat from your skin and into the fibers of the wool. Plus they don't retain odor the way some polypropylene base layers can. Look for tops and bottoms made by Smartwool.
Then you need your warm wicking socks, also made out of magical merino wool to absorb any moisture. Put your socks over your base-layer pants so they feel extra secure, and they're less likely to slip down into your boots that way.

If it's really chilly out, like under 30°F, you're going to want to add an extra layer before putting on your waterproof coat and pants. I layer up with some cozy, fleece pants and a fleece jacket.
Now you're ready for a waterproof and windproof coat, I prefer one made with down since I get cold easily. You also need to slip on some waterproof snowpants. Look for a coat and pants that have zipper vents, so you can let some air in if you start to get hot.
Don't forget a warm hat and waterproof mittens, too. These can be easily removed when you start to overheat.

Fit's Tips: Bring a lumbar pack or backpack so you can pack an extra layer or two in case you need it. Packing a pair of dry socks and some hand warmers isn't a bad idea either.

I Love Your ShopStyle: For the Love of Layering

I love to layer, you love to layer. Still, that's not to say that the art of layering comes easy for everyone. It sure looks like it comes easy for NaifMeggie. She created her ensemble for the love of layering. I would wear that outfit in a heartbeat. It's cozy without compromising an inch of style. My favorite part is the mellow color scheme.

Charm Loved Ones With a Strawberry Layer Cake

My guy's favorite dessert of all time is strawberry shortcake, and for weeks now, he's been begging me to make it. Since the beloved berries are starting to turn up at the farmers market, I finally decided to win him over with a luxuriously creamy strawberry layer cake.

Unfortunately, the day I baked this cake, the city of San Francisco had record-high temperatures, something that my cool, whipped cake wasn't so thrilled about - it wound up being a classic case of theirs versus mine.

While I wouldn't suggest making this layer cake during a heat wave with no A/C and a hot oven, I would otherwise highly recommend this sweet, satisfying, crowd-pleaser of a dessert. It's a perfect use for Spring strawberries. To see the recipe, read more.

Strawberries and Cream Cake
From Every Day With Rachael Ray

Ingredients

2 sticks (8 ounces) unsalted butter, at room temperature
2 cups plus 6 tablespoons sugar
4 large eggs, at room temperature
1 tablespoon baking powder
1 1/2 teaspoons pure vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
2 cups low-fat buttermilk
3 cups flour
2 pints strawberries, hulled (I would recommend 3 pints)
1 1/2 teaspoons cornstarch
1 teaspoon fresh lemon juice
8 ounces mascarpone cheese
1 pint heavy cream

Directions

Preheat the oven to 350°. Grease a large rimmed baking sheet and line with parchment that extends an inch above the rim on all sides. Grease the parchment and set aside.
Using an electric mixer, beat the butter and 2 cups sugar at high speed, scraping down the sides occasionally, until fluffy, about 5 minutes. Add the eggs 1 at a time, beating after each addition. Mix in the baking powder, vanilla, baking soda and salt at medium speed. Add half each of the buttermilk and flour and mix at low speed just until smooth. Repeat with the remaining buttermilk and flour.
Pour the batter into the prepared pan and spread evenly. Bake until a toothpick inserted comes out clean, 25 to 30 minutes. Transfer to a large rack to cool, then invert and discard the parchment.
Chop half the berries and place in a small saucepan with 2 tablespoons sugar, the cornstarch and lemon juice, simmering over low heat. Cook, stirring often, until thickened, about 5 minutes. Let cool.
Using an electric mixer, whisk the mascarpone with the remaining 1/4 cup sugar on low speed, then add the cream until combined. Increase the speed to medium-high and whisk until stiff peaks form, 3 to 4 minutes.
Using a serrated knife, cut the cake crosswise into thirds. Set 1 layer on a serving platter and spread half the strawberry puree on top, followed by 1 1/2 cups frosting. set the second layer on top of the frosting and press lightly into place. Spread the remaining puree on top, then another 1 1/2 cups frosting. Place the third layer on top and press lightly. Coat with the remaining frosting. Slice the remaining berries and scatter on top.

Serves 10.

Would You Eat This Sweet Seven-Layer Dip?

I'm not going to lie; I'm looking forward to Cinco de Mayo for one true reason. So I can eat as much as I want of the cool, creamy, and spicy gastronomic delight known as seven-layer dip. And I'm not alone: the writers at Evite love seven-layer dip so much that they created a dessert version of it, with peanut butter, Nutella, marshmallows, shredded coconut, chocolate chips, salted peanuts, and gummy bears, to serve with Ritz crackers and Nilla wafers. Does this sweet-tooth version seem like something you could dig into?
