When I was searching for a reader's recipe to feature, I was thinking Super Bowl food (as I will be for the rest of the week!) and came across a Super Bowl practice run in the Kitchen Goddess group on TeamSugar. Before the big day, LaylaCams wanted to test out her recipes and in this post she lists the entire menu complete with tons of great images. One of her delicious dishes is a meatball appetizer perfect for a party.

This week's reader's recipe comes from the Kitchen Goddess herself, Twinkle. These divine looking meatballs are served with potatoes and lingonberry jam. I personally love the way sweet and savory go together and can't wait to taste that combination.

With its steamy broth, hearty meatballs, and chunky vegetables, one would hardly know that this Italian soup is ready in under half an hour. So go ahead, tell your family/roommate/ husband/boyfriend/kids you slaved away all afternoon. Using pre-made meatballs, pre-made broth, and beans makes this a quick fix meal.

I can't always find ground chicken at the store, so when I do, I stock up on it, and use it in various dishes. Last night, I busted out the wok for a spicy and speedy Thai noodle stir-fry, and tonight I'm using the rest of the ground meat to create a newfangled twist on a familiar favorite: meatballs.
Rather than the typical pork-and-beef mix, I'm taking the meatball to a different level with a mixture of chicken, scallions, and ginger — then tossing in shelled edamame, snow peas, and rice to the mix for a balanced supper.

When I was a cheerleader in college, I preferred to dance at the fast-paced basketball games over the long, hot football games. There's something so exciting about basketball that makes it a fabulous sport to follow. Thanks to the office pool, this year, I've gotten very into March Madness, the whirlwind tournament that selects the nation's best college basketball team.
