1 cup (100 grams) graham wafer crumbs or crushed digestive cookies&lt;br /&gt;
1 tablespoon (15 grams) granulated white sugar&lt;br /&gt;
4 tablespoons (55 grams) unsalted butter, melted&lt;br /&gt;
&lt;b&gt;Filling&lt;/b&gt;:&lt;br /&gt;
2 - 8 ounce (454 grams) packages of cream cheese, room temperature (use full fat, not reduced or fat free cream cheese)&lt;br /&gt;
2/3 cup (130 grams) granulated white sugar&lt;br /&gt;
2 large eggs, room temperature&lt;br /&gt;
1 teaspoon pure vanilla extract&lt;br /&gt;
1/2 cup sour cream&lt;br /&gt;
Strawberry puree and/or fresh berries, optional garnish&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;Line 12  - 2 3/4 x 1 1/2 inch muffin cups with one - 2 inch (5 cm) wide x 6 inch (15 cm) long strip of parchment paper.  (The ends will hang over the sides of the cups to be used as handles to lift out the baked cheesecakes.) Preheat oven to 300 degrees F (150 degrees C) and place rack in center of oven.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For Crust&lt;/b&gt;: in a small bowl combine the graham cracker crumbs, sugar, and melted butter.&lt;/li&gt;
&lt;li&gt;Press about a tablespoon of crumbs on the bottoms of the 12 muffin cups lined with parchment paper. Cover and refrigerate while you make the filling.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For Filling&lt;/b&gt;: in the bowl of your electric mixer (or with a hand mixer), beat the cream cheese on low speed until smooth.  Add the sugar and beat until combined.&lt;/li&gt;
&lt;li&gt;Scrape down the sides of the bowl and add the eggs, one at a time, beating about 30 seconds. Add the vanilla extract and sour cream and beat until incorporated.&lt;/li&gt;
&lt;li&gt;Remove the crusts from the refrigerator and evenly divide the filling among the 12 muffin cups.&lt;/li&gt;
&lt;li&gt;Bake for about 18 - 20 minutes or until firm but the centers of the cheesecakes still wobble a little. Remove from oven and place on a wire rack. Let cool and then cover with plastic wrap and refrigerate (a few hours or even overnight).&lt;/li&gt;
&lt;li&gt;Remove cheesecakes by first running a sharp knife around the inside edge of the muffin cups to loosen the cheesecakes. Then, taking hold of the two strips of parchment paper, carefully lift each cheesecake from the muffin cups. Gently peel off the parchment paper and place on your serving plate. If desired, top with strawberry sauce and/or fresh berries.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Makes 12 individual cheesecakes.&lt;/p&gt;

3 cups all purpose flour&lt;br /&gt;
1/2 cup (packed) golden brown sugar&lt;br /&gt;

9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, cut into 1/4-inch cubes, chilled&lt;br /&gt;
1 cup whipping cream, plus additional for brushing biscuits&lt;br /&gt;
2 tablespoons raw sugar&lt;br /&gt;
&lt;b&gt;Strawberries&lt;/b&gt;&lt;br /&gt;
4 cups halved hulled strawberries (about 2 to 2 1/2 pounds)&lt;br /&gt;
1/4 cup sugar&lt;br /&gt;
2 tablespoons fresh lemon juice&lt;br /&gt;
1 tablespoon finely grated lemon peel&lt;br /&gt;
1 tablespoon chopped fresh mint &lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;&lt;b&gt;For white chocolate cream&lt;/b&gt;: Place white chocolate in medium bowl.&lt;/li&gt;
&lt;li&gt;Place 1 tablespoon water in very small bowl. Sprinkle gelatin over; let stand until gelatin softens, about 15 minutes.&lt;/li&gt;
&lt;li&gt;Bring 1/2 cup cream and 3 tablespoons sugar to simmer in small saucepan, stirring until sugar dissolves.&lt;/li&gt;
&lt;li&gt;Remove from heat; add gelatin and stir until dissolved.&lt;/li&gt;
&lt;li&gt;Pour gelatin mixture over white chocolate, whisking until melted and smooth. Cool to room temperature.&lt;/li&gt;
&lt;li&gt;Beat remaining 2 cups cream in large bowl until peaks form. Fold 1/2 cup cream into white chocolate mixture to lighten.&lt;/li&gt;
&lt;li&gt;Fold chocolate mixture into remaining cream in bowl. Refrigerate until cold, at least 1 hour and up to 3 hours.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For biscuits&lt;/b&gt;: Combine flour, brown sugar, baking powder, and salt in large bowl; whisk to blend. Add butter.&lt;/li&gt;
&lt;li&gt;Using fingertips, rub in until coarse meal forms.&lt;/li&gt;
&lt;li&gt;Gradually add 1 cup cream, tossing until moist clumps form.&lt;/li&gt;
&lt;li&gt;Gather dough into ball; shape into 8 1/2-inch round on parchment or foil. Chill 15 minutes.&lt;/li&gt;
&lt;li&gt;Preheat oven to 350°F. Line rimmed baking sheet with parchment paper.&lt;/li&gt;
&lt;li&gt;Cut dough into eight 3-inch rounds, gathering scraps and reshaping as needed.&lt;/li&gt;
&lt;li&gt;Place rounds on prepared sheet, spacing 2 inches apart. Brush tops with cream and sprinkle with raw sugar. Bake until tester inserted into center comes out clean, about 20 minutes. Cool completely. (Can be made 2 hours ahead. Let stand at room temperature. If desired, rewarm in 350°F oven 5 minutes before using.)&lt;/li&gt;
&lt;li&gt;&lt;b&gt;For strawberries&lt;/b&gt;: Combine strawberries, 1/4 cup sugar, lemon juice, lemon peel, and mint in medium bowl; toss to blend. Let stand at room temperature until juices form, at least 10 minutes, or refrigerate until ready to use, up to 2 hours.&lt;/li&gt;
&lt;li&gt;Cut biscuits in half horizontally or crumble into pieces. Place in pretty cups and mound strawberries with syrup on each, dividing equally.&lt;/li&gt;
&lt;li&gt;Cover with white chocolate cream and more biscuit.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serves 8.&lt;/p&gt;

Vegetable oil, for frying &lt;/p&gt;

&lt;li&gt;Using a mandoline, slice the potatoes 1/16 inch thick. Rinse the slices under cold water and put them in a large bowl with 2 tablespoons of salt. Add cold water to cover and let stand for 1 hour.&lt;/li&gt;
&lt;li&gt;Drain the potatoes and return them to the bowl. Add water to cover and let soak for 1 more hour. Drain and pat dry.&lt;/li&gt;
&lt;li&gt;In a large pot, heat 2 inches of oil to 350° over moderately high heat.&lt;/li&gt;
&lt;li&gt;Working in small batches, fry the potato chips, stirring a few times, until golden, about 4 minutes.&lt;/li&gt;
&lt;li&gt;Using a slotted spoon, transfer the potato chips to paper towels to drain. Sprinkle with salt and serve.&lt;/li&gt;
&lt;/ol&gt;

&lt;li&gt;Heat nonstick skillet over high heat. Coat meat bites lightly in oil. Season with steak seasoning blend or salt and pepper to taste. Cook the meat until caramelized all over, about 2 minutes on each side.&lt;/li&gt;

Yesterday I made &lt;a href=&quot;http://yumsugar.com/113822&quot; &gt;booklet invitations&lt;/a&gt; complete with knitting instructions and today I&#039;m figuring out what will be on the menu. The party starts at 4 in the afternoon and will probably last between 3-5 hours. It&#039;s between lunch and dinner and I&#039;ll offer a snack for the girls to munch on while we discuss yarn, techniques, casting on and purling. Since I don&#039;t want to waste knitting time in the kitchen, an assortment of room temperature appetizers is the best option. All of the food must be cooked, plated, and ready to eat when the party begins. The snacks also must be uncomplicated, yet delicious, finger foods that require no usage of plates, forks, or knives. Hands need to be free to knit! With that said I&#039;ll make four savory treats and two sweet ones. To keep the food even more simple, all of my appetizers are vegetarian. &lt;li&gt;&lt;b&gt;For crab cakes&lt;/b&gt;: Line baking sheet with waxed paper. Whisk first 10 ingredients in large bowl. Mix in crabmeat and 1 cup panko, breaking up crabmeat slightly. Let stand 10 minutes.&lt;/li&gt;
&lt;li&gt;Place remaining panko on rimmed baking sheet, spreading slightly. Form crab mixture into sixteen 2-inch-diameter patties, using about scant 1/4 cup for each. Press both sides of patties into panko. Transfer patties to waxed-paper-lined baking sheet.&lt;/li&gt;
&lt;li&gt;Cover and chill at least 1 hour and up to 1 day.&lt;/li&gt;
&lt;li&gt;Melt 1 tablespoon butter with 1 tablespoon oil in each of 2 heavy large skillets over medium-high heat. Add crab cakes to skillets and cook until golden on both sides, adding more butter and oil as needed, about 5 minutes total.&lt;/li&gt;
&lt;li&gt;Place salad mix in very large bowl. Add 1/2 cup vinaigrette; toss. Arrange crab cakes on platter. Garnish with herb sprigs, drizzle with some of remaining vinaigrette, and serve with salad.&lt;/li&gt;

3 tablespoons cake flour&lt;br /&gt;
1 cup milk&lt;br /&gt;
10 ounces soft goat cheese&lt;br /&gt;
3 egg yolks&lt;br /&gt;
Salt and pepper to taste&lt;br /&gt;
1 cup egg whites (about 7 large)&lt;/p&gt;

&lt;li&gt;Position the rack in the center of the oven and preheat the oven to 425°.&lt;/li&gt;
&lt;li&gt;Butter eight 5-ounce ramekins, making sure to coat them well. Coat each ramekin with breadcrumbs then turn them over and tap out the excess. Reserve any remaining breadcrumbs.&lt;/li&gt;
&lt;li&gt;Melt the 3 tablespoons butter in a stainless-steel skillet over medium-high heat. Whisk in the flour and cook for 20 seconds, whisking constantly. Whisk in the milk and cook for about 1 minute, whisking constantly, until the mixture has thickened to the consistency of a thin, pourable pudding.&lt;/li&gt;
&lt;li&gt;Crumble 8 ounces of the cheese into a large mixing bowl. Pour the hot milk mixture over the goat cheese and mix well. Add the egg yolks and mix again. Season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Using an electric mixer with clean, dry beaters, beat the egg whites in a large bowl until stiff peaks form. Fold half of the whites into the cheese mixture to lighten it. Then gently fold in the remaining whites.&lt;/li&gt;
&lt;li&gt;Divide half of the souffle mixture among the prepared ramekins. Crumble the remaining 2 ounces of goat cheese and divide among the ramekins, then top with the remaining half of the souffle mixture, dividing it equally among the ramekins. Sprinkle the remaining breadcrumbs over the top.&lt;/li&gt;
&lt;li&gt;Place the ramekins in a large baking pan and pour in boiling water to come halfway up the sides of the ramekins.&lt;/li&gt;
&lt;li&gt;Bake for about 25 minutes, or until the souffles are golden. Remove from the oven and let stand, still in their water bath, for 15 minutes.&lt;/li&gt;
&lt;li&gt;Using a towel to hold the ramekins, run a knife around the inside rim to loosen. Turn out the souffles onto a baking sheet. The souffles may be held at room temperature for up to 6 hours before the final baking.&lt;/li&gt;
&lt;li&gt;When ready to serve, bake the souffles in a 425° oven for 5-7 minutes, or until deep golden brown.&lt;/li&gt;

Since the party is all about creating interesting pumpkin designs, I like to serve a menu that guests can enjoy at their leisure. &lt;/p&gt;
&lt;p&gt;For starters, I&#039;ll offer an orange and black cheese ball and spicy sausages wrapped in pizza dough. &lt;/p&gt;
&lt;p&gt;A huge pot of vegetarian chili will bubble on the stove, and in between carving pumpkins, guests can grab a bowl and top it with an assortment of items like cilantro, avocado, and sour cream. &lt;p&gt;6 spicy Italian sausages&lt;br /&gt;
1/4 cup extra-virgin olive oil, plus extra for brushing&lt;br /&gt;
15 whole garlic cloves&lt;br /&gt;
Salt and pepper&lt;br /&gt;
2 tablespoons Dijon mustard&lt;br /&gt;
3 (4-ounce) pieces pizza dough, store bought
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a saucepan add 1/2-inch water to the pan. Immerse sausages in water and simmer for 10 minutes. Remove sausage and dry the pan.&lt;/li&gt;
&lt;li&gt;Return to the heat and add the olive oil on medium heat. When hot return the sausage to the pan with garlic cloves and saute until medium brown all over.&lt;/li&gt;
&lt;li&gt;Remove garlic to a bowl. Remove sausage to a plate to cool.&lt;/li&gt;
&lt;li&gt;Use a fork to mash the garlic with salt and pepper. Stir in mustard and set aside.&lt;/li&gt;
&lt;li&gt;Preheat oven to 375 degrees F.&lt;/li&gt;
&lt;li&gt;Cut each piece of dough into 2 and roll out until 1/4-inch thick. Cut 6 pieces of dough about 3 inches wide and 1/2-inch shorter than the length of sausage, just enough to wrap around sausage with the ends peeking out.&lt;/li&gt;
&lt;li&gt;Spread bottom of each dough with a tablespoon of garlic/mustard paste. Set sausage on top, moisten 1 dough edge with a wet finger so it sticks together and roll. Press the seam firmly and set them on a lightly floured sheet pan, seam side down.&lt;/li&gt;
&lt;li&gt;Brush with olive oil. Bake until brown all around.&lt;/li&gt;
