 <title>More Peanut Butter Involved in Salmonella Scare</title>

It sounded a bit awful, so naturally I had to buy one.&lt;/p&gt;

&lt;p&gt;Well for starters, there are two individual stacks inside. One is a piece of chocolate, stacked with a peanut butter cup, stacked with a chocolate chip cookie and then dotted with some M&amp;amp;Ms. The other is chocolate, stacked with a peanut butter cup, an Oreo, and the sprinkled with white chocolate chips. And based on the description, it should have been delicious. Yet somehow it was just not. It was more gluttonous than anything else. One big sugar bomb, no individual flavors. The calories (240 for both pieces) were comparable to several other candy bars, but personally I&#039;d rather eat a regular Reese&#039;s Peanut Butter Cup than this one. &lt;/p&gt;

&lt;li&gt;&lt;b&gt;Make peanut butter layer&lt;/b&gt;: beat cream cheese, peanut butter, confectioners sugar, and salt in a bowl with an electric mixer at medium speed until combined well, about 4 minutes.&lt;/li&gt;
&lt;li&gt;Beat cream with vanilla in a bowl with cleaned beaters at medium-high speed until it just holds stiff peaks, then gently fold into peanut butter mixture until just combined.&lt;/li&gt;
&lt;li&gt;Spread mixture evenly on top of chocolate layer and freeze, pan covered with foil, until firm, about 2 hours.&lt;/li&gt;
&lt;li&gt;&lt;b&gt;Make hot fudge sauce&lt;/b&gt;: bring cream, syrup, sugar, cocoa, salt, and chocolate to a boil in a 1-quart heavy saucepan over moderate heat, stirring until chocolate is melted.&lt;/li&gt;
&lt;li&gt;Reduce heat and simmer, stirring frequently, until thickened, about 3 minutes, then remove from heat.&lt;/li&gt;
&lt;li&gt;Stir in vanilla until incorporated. Cool sauce to warm.&lt;/li&gt;

I ate the bar in the late afternoon while carpooling children about town, and then ran an hour later. The thinkGreen bar kept me energized for a 50-minute pre-dinner run. In the end though, I think I will continue to work on eating my greens, actual spinach and broccoli rather than powdered versions of them. This bar will not become my mainstay energy bar, but I certainly won&#039;t avoid it either.&lt;/p&gt;

&lt;p&gt;16 oz natural peanut butter (the kind with peanuts only, no added sugar!)&lt;br /&gt;
2 eggs&lt;br /&gt;
2 tsp baking soda&lt;br /&gt;
1 cup spun honey (aka creme honey, but regular honey is okay too)&lt;/p&gt;

&lt;li&gt;Preheat oven to 350 degrees.&lt;/li&gt;

&lt;p&gt;Note: If you do not have a stand mixer, a large bowl with hand mixer will work well. If you do not have either, you can mix by hand but it will be gooey and difficult.&lt;/li&gt;
&lt;li&gt;Pour mixture onto ungreased cookie sheet, using a spatula to spread the batter to cover entire pan. &lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;
&lt;p&gt;Note: Thinking a brownie like concoction would be better than a cookiebar, I ended up using a cake pan. However the middles were too gooey for my liking. People devoured them nonetheless, but if you don&#039;t want to fiddle with the cooking time/temp, then I recommend sticking with bars.&lt;/li&gt;
&lt;li&gt;Top with chocolate chips if desired. You could also top with peanuts, or swirl in jam.&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;
