It&#039;s filling and easy to make a large batch. &lt;p&gt;What provides this salad with incredible flavor is the sun-dried tomato dressing - it&#039;s so good I&#039;ve enjoyed it with fish!  Made in a blender or food processor, the dressing is a mixture of tomatoes, capers, and garlic, thinned with oil and red wine vinegar. A generous handful of parmesan cheese and fresh basil finish off the satisfying salad that only tastes better the next day. juice of half a lemon&lt;br /&gt;

&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;&lt;br /&gt;Over medium heat, in a large fry pan, heat up some cooking oil ( I prefer Spectrum Canola Oil). Add the diced garlic and carrots. Saute carrots and garlic until the carrots turn brown and begin to caramelize. It should smell delicious!&lt;/p&gt;
&lt;p&gt;In a medium bowl throw in the beans and d&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;ill. Lightly toss. When carrots are done roasting add to the beans, add the dill. Lightly toss once more.&lt;/p&gt;
&lt;p&gt;In a small bowl whisk together all of the vinaigrette ingredients. Take a taste to test seasoning. You may need to add more salt/pepper. Lightly toss into the bean salad.

It&#039;s super easy to make a huge batch and tastes better after the flavors have mixed for a few hours. There&#039;s something about the small, rice-like shape that makes the salad seem modern and more glamorous. This recipe is my own invention: it uses two types of tomatoes, olives, green onions, and feta cheese. The dressing is a simple red wine vinaigrette. &lt;p&gt;1 lb. of orzo&lt;br /&gt;
1/4 cup red wine vinegar&lt;br /&gt;
half of a lemon, juiced&lt;br /&gt;
2 teaspoons Dijon mustard&lt;br /&gt;
1 small shallot, minced&lt;br /&gt;
salt&lt;br /&gt;
freshly ground black pepper&lt;br /&gt;
1/2 cup extra-virgin olive oil&lt;br /&gt;
1 pint cherry tomatoes, sliced in half&lt;br /&gt;
1 small jar sundried tomatoes in oil&lt;br /&gt;
1/2 cup pitted Kalamata olives, sliced in half lengthwise&lt;br /&gt;
1 bunch green onions, dark greens removed, finely chopped&lt;br /&gt;
1/4 cup fresh basil, chopped&lt;br /&gt;
1/4 cup fresh parsley, chopped&lt;br /&gt;
8 ounces feta cheese, crumbled&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Fill a large pot with water and season with salt. Bring to a boil over high heat. Cook the orzo according to the instructions on the package.&lt;/li&gt;
&lt;li&gt;Drain well and rinse with cold water until the orzo is cool.&lt;/li&gt;
&lt;li&gt;While the pasta is cooking, make the vinaigrette. Whisk the vinegar, lemon juice, mustard, shallot, salt, and pepper in a bowl. Slowly pour in the olive oil, in a steady stream, whisking constantly to combine. Season to taste with salt and pepper.&lt;/li&gt;
&lt;li&gt;In a big bowl, combine the orzo with the tomatoes, olives, green onions, fresh herbs, and cheese. Pour on half of the vinaigrette. Season the salad generously with salt and pepper. Toss well to coat. Add more vinaigrette until the pasta is moistened to your liking. Chill until serving.&lt;/li&gt;

&lt;p&gt;1/2 cup dry white vermouth&lt;br /&gt;
1/2 cup extra-virgin olive oil&lt;br /&gt;
Salt and freshly ground black pepper&lt;br /&gt;
1 pound mixed mushrooms- oyster, shiitake, portobello and cremini&lt;br /&gt;
1 tablespoon white wine vinegar&lt;br /&gt;
1 tablespoon very finely chopped shallot&lt;br /&gt;
4 ounces baby arugula&lt;br /&gt;
1/4 cup coarsely chopped walnuts&lt;br /&gt;
1 1/2 ounces fresh goat cheese, crumbled (scant 1/4 cup) &lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;In a large bowl, whisk the vermouth with the olive oil and season with salt and pepper.&lt;/li&gt;
&lt;li&gt;Trim the root ends of the oyster mushrooms, leaving them attached in small bunches. Discard the shiitake stems and leave the caps whole. Stem the portobellos. Wipe off the cremini. Add all of the mushrooms to the vermouth marinade, then toss and let stand for 20 minutes, stirring them occasionally.&lt;/li&gt;
&lt;li&gt;Light a grill or preheat a broiler. Drain the mushrooms; reserve 1 tablespoon of the marinade. Grill the mushrooms or broil them over high heat until browned and tender, about 15 minutes. Thickly slice the grilled mushrooms.&lt;/li&gt;
&lt;li&gt;Add the vinegar and shallot to the large bowl and whisk in the reserved marinade to taste. Add the arugula and walnuts, season with salt and pepper and toss to coat.&lt;/li&gt;
&lt;li&gt;Transfer the arugula salad to plates, top with the grilled mushrooms and crumbled goat cheese and serve.&lt;/li&gt;

&lt;li&gt;Place garlic, anchovy fillets, and salt in a large wooden salad bowl.* Using two dinner forks, mash garlic and anchovies into a paste.&lt;/li&gt;
&lt;li&gt;Using one fork, whisk in pepper, lemon juice, Worcestershire sauce, Dijon mustard, and egg yolk.&lt;/li&gt;
&lt;li&gt;Using the fork, whisk in the olive oil.&lt;/li&gt;
&lt;li&gt;Chop romaine leaves into 1- to 1 1/2-inch pieces. Add croutons, romaine, and cheese to the bowl, and toss well. If you wish, grate extra cheese over the top. Serve immediately. To make a version of this dressing that you can store, simply mince garlic and anchovies, and place with remaining ingredients in a jar. Screw the lid on the jar tightly, and shake to combine. Shake the jar before each use. Store, refrigerated, for up to 4 days.&lt;/li&gt;
