Fast & Easy Dinner: Seared Scallops With Leek Ribbons

Who says you can't have an elegant, romantic, sophisticated meal in the middle of the week? This recipe for seared scallops with leek ribbons not only sounds pretty, but it tastes sublime too!

The pure richness of the scallops combines perfectly with the mild onion flavor of the leeks. Although the name implies a dish that only an experienced cook could make, the technique is surprisingly uncomplicated. To learn it, read more.

Seared Scallops With Leek Ribbons
From Real Simple

Ingredients

1 1/2 pounds sea scallops
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons olive oil
4 medium leeks (white and light green parts), quartered lengthwise and rinsed
1 lemon, cut into wedges (optional)
2 tablespoons pesto (optional)

Directions

Rinse the scallops and pat them dry with paper towels. Season them with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper.
Heat 1 tablespoon of the oil in a large cast-iron skillet over medium-high heat. Add the scallops and cook until golden brown and cooked through, 2 to 3 minutes per side. Transfer to a plate.
Wipe out skillet and return to medium-low heat. Add the remaining oil and the leeks and toss.
Cover and cook, turning occasionally, until softened, about 10 minutes. Season with the remaining salt and pepper.
Return the scallops to skillet to rewarm. If using, squeeze on the lemon juice or spoon the pesto over the top. Transfer to individual plates.

Serves 4.

Seafood Dilemma: Shrimp vs. Scallops

Nutritionally, it's hard to choose between scallops and shrimp, since they're quite comparable. When it comes to iron content, shrimp is not so shrimpy, containing almost 25 percent of an adult woman's recommended daily intake. Both are also high in vitamin B12, which supports metabolic function among other things.

Not quite sure how to prepare either type of shellfish? Try shrimp and whole wheat couscous or spiced scallops with balsamic-braised cabbage.

Fast & Easy Dinner: Scallops With Sage and Corn

While I'm a huge fan of corn on the cob, lately I haven't been able to get enough corn salad. If you've never carefully cut the kernels off a fresh corn cob, I suggest you do so tonight. With its succulent scallops, crunchy bell peppers, and sweet corn, this is one satisfying salad.

Scallops With Sage and Corn
From The Nest

Ingredients

1 pound scallops
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons extra-virgin olive oil
1/4 cup fresh sage, chopped
1 garlic clove, pressed or minced
2 cups fresh corn kernels
1 large red bell pepper, seeded and diced
Sage sprigs (optional)

Directions

Wash the scallops in cold water and pat dry. Place them on a plate and sprinkle with the lemon juice, salt and black pepper.
Combine the oil, chopped sage and garlic in a large nonstick skillet and cook over medium heat for about 1 minute, or until the garlic starts to sizzle.
Add the scallops and cook, stirring frequently, for about 2 minutes, or until the scallops turn from translucent to opaque. Remove the scallops from the pan and set aside.
Using the same skillet, cook the corn and red peppers, stirring frequently, for about 3 minutes, or until tender. Stir in the scallops and remove from the heat. Serve garnished with the sage sprigs.

Fast & Easy Dinner: Pineapple and Scallop Skewers

Take an exotic escape to a tropical locale with this marvelous meal. Scallops - which are quick-cooking shellfish that are effortless to season - are tossed with a zesty lime cilantro marinade.

Spicy jalapenos add heat, juicy pineapple provides a sweetness, and chunks of avocado yield a creamy coolness. If you don't have an indoor grill pan, roast the skewers in the oven until scallops turn opaque.

Pineapple and Scallop Skewers
From Better Homes and Gardens

Ingredients

2 tsp. finely shredded lime peel
1/4 cup lime juice
1/4 cup snipped fresh cilantro
2 small green and/or red jalapeño pepper, seeded and finely chopped
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. black pepper
1/3 cup canola oil
16 sea scallops (about 1-1/2 lb.)
12 large fresh pineapple chunks
1 avocado, peeled, pitted, and cut into 8 chunks

Directions

In a small bowl combine lime peel, lime juice, cilantro, jalapeno, sugar, salt, and pepper. Slowly whisk in oil until combined; set aside.
In a large bowl combine scallops, pineapple, and avocado. Toss with 2 tablespoons of the lime juice mixture. Let stand for 15 minutes, stirring occasionally. Do not marinate longer, or scallops will get tough.
Alternately thread 4 scallops, 3 pineapple chunks and 2 avocado chunks on each of 4 12- to 16-inch skewers.
Grill kabobs on a well-greased grill rack directly over medium-high heat for about 8 minutes or until scallops turn opaque, turning once halfway through grilling. Transfer kabobs to a serving platter and serve with remaining lime juice mixture.

It's official: Chloë adores Chloé. By now, the actress has worn Chloé's scalloped suit from the Spring collection three times. First the camel color in April, with a leopard-print top underneath and strappy suede wedge sandals. A month later, she wore the ivory version with a quirky floral hat and the same strappy sandals. Scalloped edging is a bit of an unusual trend for Spring that can't help but make a statement. It was spotted on the catwalk at Chloe and Christopher Kane where it was used to edge dresses, jackets and ruffles! It's a fun and flirty addition to clothes which has begun to appear on the High Street too. For example, at Whistle it adorns blouses for a very girly style, or on detailing on a smock top at Topshop.
