 <title>An Evening with Bittman&#039;s Jambalaya</title>

They&#039;re known for down-home style soul food and a festive atmosphere - seriously, it&#039;s like going to a party at someone&#039;s house. &lt;p&gt;&lt;b&gt;Ingredients&lt;/b&gt;&lt;/p&gt;
&lt;p&gt;3 Tablespoons extra-virgin olive oil&lt;br /&gt;
2 cups sliced onions&lt;br /&gt;
2 cups diced bell peppers, preferably red or yellow [I used one red and one yellow]&lt;br /&gt;
salt and freshly ground black pepper to taste&lt;br /&gt;
4 cups chicken, beef, vegetable, or shrimp stock or water&lt;br /&gt;
2 Tablespoons minced garlic&lt;br /&gt;
1/2 teaspoon cayenne pepper, or to taste&lt;br /&gt;
2 teaspoons fresh thyme leaves, or 1 teaspoon dried thyme&lt;br /&gt;
2 cups peeled, seeded, and chopped tomatoes (canned are fine; drain first)&lt;br /&gt;
2 cups long-grain rice&lt;br /&gt;
2 pounds shrimp, peeled (and deveined, if you like), and cut into pieces if very large&lt;br /&gt;
minced fresh parsley or cilantro for garnish
&lt;/p&gt;
&lt;p&gt;&lt;b&gt;Directions&lt;/b&gt;
&lt;ol&gt;
&lt;li&gt;Place the olive oil in a medium-to-large casserole or dutch oven [I used a large, deep sauté pan] and turn the heat to medium high.&lt;/li&gt;
&lt;li&gt;Add the onions and bell pepper, sprinkle with salt and pepper, and cook, stirring occasionally, until the onion softens and just begins to brown, about 10 minutes. Meanwhile, warm the stock in a small saucepan over medium heat.&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;Stir in the garlic, cayenne, and thyme, and stir for about 30 seconds.&lt;/li&gt;
&lt;li&gt;Add the tomatoes, and turn the heat to medium-high. Cook, stirring for 5 minutes, or until the tomatoes begin to break up.&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;
&lt;li&gt;Stir in the rice, then the stock. Bring to a boil, turn the heat to medium, and cook, uncovered, stirring occasionally, until the rice is tender and the liquid just about absorbed, 20 to 30 minutes. [I ended up adding some of the drained off tomato liquid, as the rice wasn&#039;t quite cooked fully and the liquid was nearly gone.]&lt;span class=&quot;inline left&quot;&gt;&lt;/span&gt;&lt;/li&gt;

 <title>A Little Soul Food</title>

As we all know, today is Dr. Martin Luther King Jr. Day. What you may not know is that Dr. King was a true fan of good old fashioned authentic southern food. Born in Alabama in 1929, Dr. King was raised eating the African-American food of the south, commonly called Soul Food and his favorite food was fried pig&#039;s ears sandwiches. Usually I would encourage you to make this dish in honor of him and his accomplishments, but I doubt any of us will be frying up pig&#039;s ears today. Instead, I suggest we make another of his soul food fave, smothered pork chops. For the recipe, read more&lt;/p&gt;

&lt;p&gt;2 tbsp butter&lt;br /&gt;
2 tbsp flour&lt;br /&gt;
1 1/2 cups rich beef broth&lt;br /&gt;
Pinch Sage leaves, crumbled&lt;br /&gt;
6 thick loin pork chops&lt;br /&gt;
1 cup flour for dredging&lt;br /&gt;
Salt and pepper, to taste&lt;br /&gt;
1/2 cup lard&lt;br /&gt;
3 large onions, sliced&lt;br /&gt;
3 cloves garlic, minced&lt;br /&gt;
1/4 cup celery, minced&lt;/p&gt;
&lt;ol&gt;
&lt;li&gt;In a small saucepan melt butter over medium-high heat, stir in the 2 tablespoons flour, and cook, stirring constantly with a wire  whisk, until lightly browned.&lt;/li&gt;
&lt;li&gt;Stir in broth and sage, mix well,  remove from heat, and set aside. This mixture will be the sauce.&lt;/li&gt;
&lt;li&gt;Add salt and pepper to the 1 cup flour; dredge chops in the  mixture.&lt;/li&gt;
&lt;li&gt;In a large, heavy skillet heat 1/4 cup of the lard over medium- high heat. Add chops and cook until they are browned.&lt;/li&gt;
&lt;li&gt;Move browned chops to a large, oven casserole with a cover.&lt;/li&gt;
&lt;li&gt;Preheat oven to 350° F.&lt;/li&gt;
&lt;li&gt;Melt the remaining lard in skillet over high heat.&lt;/li&gt;
&lt;li&gt;Add onions, garlic, and celery; lower heat to&lt;br /&gt;
medium, and cook, stirring frequently to avoid burning, until onions are golden (about 8 to 10 minutes).&lt;/li&gt;
&lt;li&gt;Remove vegetables with a slotted spoon and place over chops in the casserole.&lt;/li&gt;
&lt;li&gt;Pour off all lard from the skillet. Add reserved sauce, raise heat to high, bring to a boil, and cook for 1 minute, stirring vigorously and scraping the bottom of the skillet.&lt;/li&gt;
&lt;li&gt;Pour sauce over chops in casserole, cover, and bake for 30 minutes.  &lt;/li&gt;
&lt;li&gt;Serve with mashed potatoes.&lt;/li&gt;
&lt;/ol&gt;
&lt;p&gt;Serves 6.&lt;/p&gt;

&lt;p&gt;Alanis said that marathon training did trigger some eating disorder type behaviors, but she knew there was no way she could undereat and maintain the high level of energy needed in order to run. So training for this marathon actually helped her find balance in how she fueled herself. This amazing singer was also aware of not exercising obsessively. She has an order of priorities now: Sleep first. Food second. Run third. Alanis said, &quot;I don&#039;t have the first two nailed, I can&#039;t run. So it incentivized me to nurture the first two. When I run healthfully I feel empowered and kind. When I run obsessively I feel nervous, stressed out and disassociated.&quot; &lt;/p&gt;
