Top 10 Food Trends for 2007

The Institute of Food Technologists (yep such a place exists) has come up with the Top 10 Food Trends for 2007. From upscale at home, to snacking on your own, the 2007 trends are definitely diverse and definitely speak to our ever changing society.

Since the IFT document is actually 39 pages long, I thought I'd help you out by giving you a general overview.

Dining at Home - 75% of people polled said that they preferred to eat in (at least 5 nights a week). They liked this because they thought homemade food to be healthier. However the rise of take out and to-go meals are on the rise too.

Food as Fun - 8 out of 10 diners "trade up" when dining out and splurge on premium, gourmet and exotic foods. Plus, celebrity chefs are just as famous as some movie stars.

Convenient Products - With schedules getting busier and busier, people are looking for fresh, ready-to-eat food such as salads, precut veggies, pouches of tuna, skillet meals, single servings and more.

Food "Sense" - Expect more foods with strong aromas, bigger crunch, crispiness, and freshness.

Kids Rule - Parents are becoming more aware of the growing obesity rate in children. More companies are working on new and healthy snacks created just for kids.

To see the other 5 Food Trends, read more

Free, Free, Free - I'm talking about fat free, caffeine free, sugar free, gluten free, etc. The market for "free" products has been going strong and continues on for 2007.

Eating Local - The slowfood movement is gaining momentum. People are eating locally, seasonally and are watching their "foodmiles" - the new buzzword that means the number of miles food travels from field to table.

Just What the Doctor Ordered - More than 1/3 of Americans are now basing their food purchases upon advice from their doctors.

Unique Beverages - What have I been telling you guys all along? Flavored waters, innovative teas and new energy sodas are all the rage this year.

Snacky Snacks - Snacks and mini-meals are the biggest trend in the restaurant world. Taco Bell has even launched a campaign promoting the "Fourth Meal" - the one between dinner and breakfast. Plus traditional snacks are changing too, instead of cheese flavor, we'll now have three cheese flavored items.

So what do you guys think of this list? Is there anything you think should be here?

Top Ten Worst "Trans Fat" Foods

My quest against trans fat seems to be ongoing, so you can imagine my excitement when I found a list of the top ten worst trans fat foods from eDiets.

Spreads. Margarine, for example, contains both trans fats and saturated fats, both of which can lead to heart disease. Other non-butter spreads and shortening also contain large amounts of trans fat and saturated fat.

Packaged Foods. Favorites such as cake mixes and Bisquick generally have several grams of trans fat per serving.

Soups. For example, Ramen noodles and soup cups contain very high levels of trans fat.

Fast Food. Those beloved French fries and other crunchy foods are deep-fried in partially hydrogenated oil.

Frozen Food. From frozen pies to pot pies to breaded fish sticks, frozen foods generally contain trans fat. Even if the label says the product is low-fat, it can contain trans fat.

Baked Goods. Commercially baked products contain more trans fats than any other foods. Examples include doughnuts, cookies and cakes.

Chips and Crackers. That crispy texture comes from shortening. Even reduced fat brands may contain trans fat.

Breakfast Food. Cereals and energy bars often contain trans fats, even if the labels claim to be “healthy.”

Cookies and Candy. Check the labels for the fat content. For example, a chocolate bar probably will contain more trans fat than gummy bears.

Toppings and Dips. Flavored coffees, nondairy creamers, whipped toppings, gravy mixes and salad dressings typically contain trans fat.

Check out the full article on eDiets.com.

Is Food Network's Chopped a Ripoff of Top Chef?

If you watch Food Network on a regular basis, you must know - by the bombardment of promotional commercials - about its new culinary competition, Chopped.

The show, which is described as a series that "challenges four up-and-coming chefs to turn a selection of everyday ingredients into an extraordinary three-course meal. After each course, a contestant gets 'chopped' until the last man or woman left standing claims victory," is hosted by former Top Chef judge, Ted Allen. Although Chopped does not air until Tuesday, Jan. 13 (at 10 p.m.), many feel the show is a complete ripoff of Top Chef.

After watching the promo video, Eat Me Daily declared that "Food Network is totally trying to mimic Top Chef's more professional veneer, especially in the light of the more amateurish low-budget feel of the Next Food Network Star."

Spurred by the Internet's backlash against Chopped, Ted Allen has taken to his blog to defend the series. To find out what he had to say, read more.

Following a long, detailed description of each episode Allen states:

There also is a culinary straightforwardness about this show that I find really satisfying, and particularly appropriate for a company called Food Network. There is no sleep deprivation, no "Big Brother" house full of bunk beds and cameras, no booze-fueled personal drama (as much as we all love the brainwashing and catfights on that certain show I used to judge). There are no team or catering challenges. Best of all, there is no product placement, so you never see passionate lovers of good food being forced to use packaged convenience junk thanks to Kraft/Altria/Exxon's sponsorship.

I'll admit when I first heard about the show, I wondered if it would be too similar to Top Chef. What do you think about the competition's resemblance? Is Chopped a cheap, made-for-the-masses knockoff?

Source, Source

Top 10 Healthiest Foods to Feed Your Kids

Being that it is National Nutrition Month, let's think about nutrition for the kids too. Being that they're still growing, we need to make sure they are getting all the essentials. eDiets has created a great list of the top 10 foods for kids. Don't have kids? This is still a great little lesson on nutritious foods!

Oatmeal: A fabulous breakfast food, full of B vitamins, iron, zinc and calcium. Old-fashioned oatmeal offers quick energy for busy kids with its carb load and fiber count.

Eggs: Eggs are a great source of protein and other nutrients, including the B vitamins, vitamin E and zinc. The American Heart Association's Guidelines have changed, and an egg a day (for adults) is now OK. For kids? Well, they haven’t said, so use your own good judgment.

Nuts: Nut butters are great fast foods for kids. Kids need the fat (it's a good fat if it doesn't have hydrogenated oils mixed in it) and they need the protein. And while peanuts can be problematic and even life threatening to allergic kids, other nut butters may be OK. Check with your doctor first. Almond butter is a favorite of mine.

Yogurt: Kick your child's milk consumption up a notch and include yogurt on the menu. A great source of calcium, yogurt is easier to digest than regular milk and the cultures (check the label to make sure they're in there!) are very beneficial to good colon health -- especially if your child has been on antibiotics. Watch the sugar content, though. A better idea is to buy plain yogurt and sweeten it yourself with fresh fruit.

Melons: Cantaloupe provides vitamin C, beta-carotene, bits and pieces of B vitamins and trace minerals and calcium. Melons are not to be missed when they're plentiful and in season.

There's five more foods so read more

Broccoli: Kids like to call broccoli trees and sometimes you can get picky kids to eat trees rather than broccoli. Broccoli is one of the best vegetables for anyone, especially growing kids, because of its calcium content and other nutrients, such as potassium, beta-carotene and B vitamins.

Sweet Potatoes: Sweet potatoes contain 30mg beta-carotene per cup. It would take 23 cups of broccoli to get that same amount. And with 3 grams of fiber per serving, sweet potatoes deserve a place at the table.

Protein: One size does not fit all when it comes to protein. The fact is growing kids need protein to keep growing. How you're going to give it to them can vary widely, according to your preferences. Good choices include legumes, beans (combined with a grain to make a complete protein), soy products like tofu, meat, fish and poultry.

Whole Grains: The best nutrition is found in whole-grain foods. Brown rice and whole-wheat bread are a quantum leap over their white counterparts and offer necessary fiber, minerals and vitamins. Don't shortchange your kids with the white stuff.

OJ: Kids drink too much juice. However, that doesn't mean they should never drink juice. Just don't give it to them in place of water. Orange juice is full of vitamin C, vitamin E, potassium, folate and zinc. You can buy calcium-fortified orange juice too -- it's great stuff in moderation.

If You're Drinking This Holiday Season, Go Green

To me, being healthy involves more than exercise and a balanced diet - I also try to live in ways that are eco-conscious and sustainable. I recycle, eat organic and local food, and do my best to cut down on waste. I feel better knowing that I'm helping preserve our planet, and a good state of mind is essential for healthy living!

This philosophy shouldn't stop at cocktail hour. Luckily, there are more choices than ever before when it comes to organic alcohol. Since the holidays often involve parties and grand meals, why not choose responsibly made alcohol if you're imbibing this season?

To see a list of organic spirits, beer, and wine, read more.

Tru Organic Vodka ($20). Tru vodka is made from organic ingredients, and the company plants a tree in Central America for every bottle sold. The company uses less glass to produce its bottles, and the glass that is used is recycled. Top that off with a synthetic cork, soy-based ink, and packaging that converts into a shelf and you've got yourself a carbon negative rating! Aside from its straight vodka offering, choose from lemon or vanilla flavored vodka too.

Casa Noble Tequila ($40-130). Award-winning Casa Noble is made from 100% organically farmed Blue Agave plants and is USDA certified organic. All the tequila is made harvest-to-bottle on the Casa Noble estate where water usage is carefully monitored and organic cleaning products dominate. Choose from silver, resposado, anejo, single barrel resposado, and single barrel anejo.

Juniper Green Gin ($20).
Celebrity Chef Art Smith Scores New TLC Show

NBC and Fox aren't the only channels trying to nab a piece of the cooking show pie. So is cable channel TLC. Not only does the lifestyle network boast new programming like Cake Boss and the soon-to-air BBQ Pitmasters, but the channel has just ordered eight episodes of a new 30-minute series, Craving Comfort, starring celebrity chef Art Smith.

Rather than demoing dishes in the traditional cooking show sense, Smith will travel the country in search of America's most satisfying eats. Each show will focus on one particular comfort food, such as fried chicken or apple pie. Craving Comfort will debut in late 2010.

Smith, who owns Table Fifty-Two and was Oprah Winfrey's personal chef for a decade, recently starred in the Bravo series Top Chef Masters. I think David Chang is right in saying that comfort foods will be big in 2010, and that this show will take off. Are you a big enough fan of Art Smith to tune in?
