Why is it that the simplest things are always the favorites? My whole family went nuts for these tonight. And don’t think tacos have to be junky. I used lean ground turkey (white or dark meat is fine) and all organic ingredients to make these. With the added can of beans, they are really filling and one of the simplest meals to make on a busy weeknight. I can’t wait to make them again!
1 tbsp olive oil
1/2 large yellow onion, diced
1 lb ground beef or turkey
1 packet taco seasoning
1 15 oz can black or pinto beans, drained
1 box corn taco shells
shredded cheddar cheese
salsa (pico de gallo, tomatillo)
Preheat the oven to 400˚F.
Heat the olive oil in a large sauté pan over medium high heat. Cook the onion, stirring occasionally, until soft, about 5 minutes. Add the ground turkey or beef and use your spoon to break it up into smaller pieces. (If you’re going vegetarian, skip adding the meat.) Cook until the meat is just cooked through, about 5 minutes. Drain any excess fat out of the pan and return it to the cook top. Whisk the packet of taco seasoning with ½ cup water and stir until dissolved. Pour into the meat mixture and cook over medium heat until the sauce has thickened. Add the beans and stir to combine.
Place the taco shells on a cookie sheet and heat in the oven for 2-3 minutes, or until they’re just browned and crispy.
Fill each shell with a large spoonful of the taco mixture, then top with the shredded cheese, lettuce, and salsa. Serve immediately.
