My kids love this soup so much they always ask for seconds, and I love that it's a delicious, one-pot meal I can pull together on a weeknight. The ingredients list looks intimidating, but don’t fret! Just use the veggies you like and omit anything you can’t get past your kids - although I was pleasantly surprised to discover that my kids love the Swiss chard!
One tip: If you gather and prep all of your ingredients first, this will come together in just 20 minutes, plus 30 minutes for cooking!
2 tbsp olive oil
1 yellow onion, diced
2 carrots, peeled and sliced 1/2" thick
2 celery stalks, sliced 1/2" thick
2 cloves garlic, minced
3 cups Swiss chard leaves, chopped
4 cup chicken broth, low sodium
1 can (28 oz) diced tomatoes
1 can (15 oz) garbanzo beans (chickpeas), rinsed & drained
1/4 cup fresh basil, chopped
Kosher salt and freshly ground pepper
For the meatballs:
16 oz ground turkey meat
1/3 cup grated Parmesan
3 tbsp dried bread crumbs
1/2 tsp fresh sage, chopped
1 egg, lightly beaten
In a Dutch oven or soup pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook, uncovered, until softened, about 8 minutes. Stir in the garlic and cook just until fragrant, about 1 minute. Add the Swiss chard and cook until wilted, about 1 minute. Add the chicken broth and tomatoes and bring to a boil. Reduce the heat to low, cover, and simmer while you make the meatballs, about 10-15 minutes.
To make the meatballs, combine the turkey, Parmesan cheese, bread crumbs, sage, ½ teaspoon salt and ½ teaspoon pepper in a medium bowl. Stir to combine, then add the egg and mix until just incorporated.
Increase the heat to medium on the soup and bring to a gentle boil. Use a tablespoon to form the meatballs and gently drop them into the soup. Add the garbanzo beans and basil, cover, and cook until the meatballs are cooked through, about 12 minutes. Serve hot and pass the Parmesan cheese at the table.
