This kid favorite is so versatile - it's great for breakfast, dessert or snack time, and can be quickly baked with ingredients we all almost always have on hand in the kitchen, including over-ripe bananas!
Makes 12-16 slices
3 ripe bananas, mashed
1 1/2 tsp vanilla
1 egg, lightly beaten
1/4 cup sugar
1 1/4 cup whole wheat or regular flour
2 tsp baking powder
2 tbsp vegetable oil
Preheat oven to 350˚F. Lightly spray a 5 x 9” loaf pan with non-stick cooking spray.
Combine the bananas, vanilla, egg and sugar in a large bowl and mix well. In another bowl combine the flour and baking powder and mix well. Add the flour mixture to the banana mixture and mix lightly. Add the vegetable oil and mix just until moistened.
Pour the batter into the prepared pan and bake in the preheated oven for 45 minutes to 1 hour, or until a knife inserted in the center comes out clean.
Remove the bread from the pan and cool on a wire rack for at least 30 minutes before slicing.
