Easy Marinated Chicken Breasts

This simple marinade produces chicken that is delightfully tender and sure to please all palates. Enjoy it with beans and rice, as a salad topper, or stuffed in a scrumptious taco or burrito.

Serves 4


2-3 chipotle peppers in adobo sauce
1/4 red onion, diced
1/2 cup vegetable oil
2 cloves garlic
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. ancho chile powder
1 tsp. salt
1/2 tsp. freshly ground pepper
1 1/2 lbs. organic boneless, skinless chicken breasts or thighs


Place all of the ingredients except the chicken in a blender or food processor. Puree until smooth.

Pound the chicken breast to half-inch thick, then place it in a glass dish or Ziploc bag and pour the marinade over top to coat. Use a rubber spatula to make sure all of the chicken is evenly coated in marinade.


Cover the marinated chicken and refrigerate for no less than an hour (up to overnight). 

Preheat your grill for medium-high heat. Alternatively, preheat a grill pan to use on your cooktop. (Make sure you have good ventilation since this gets really smoky indoors.) When the grill is hot, use a folded paper towel to lightly oil the grill rack or pan.

Remove the chicken from the marinade, allowing any extra marinade to drip off.

Grill for 3-5 minutes per side, until the chicken is cooked through, then remove it.

Allow the grilled chicken to sit for five minutes, then slice or chop to serve.
