Recipe: Chicken Under a Brick

You won’t believe how easy it is to make flavorful, crispy chicken in less than 15 minutes. Boneless chicken breasts are pounded thinly, and then the pressure of a foil-wrapped brick cooks the chicken in 5 minutes flat!  Sprinkled with a spice rub or simply salt and pepper before cooking, this is the ultimate weeknight meal. For extra fun, allow your children to choose their own spice rub.  This is delicious with a mixed greens salad or my Avocado, Corn, and Tomato Salad. 


4 skin-on, boneless chicken breasts (about 6 oz. each)
2 tsp spice rub (such as ancho chile, chipotle, chile lime, etc)
kosher salt and freshly ground pepper
olive oil


Place the chicken breasts skin side down between 2 sheets of plastic wrap or parchment paper. Using a meat pounder, flatten them to 1/2 –inch thickness. Sprinkle each chicken breast with 1/2 tsp. spice rub (optional), salt, and pepper on both sides.


Heat the oil in a large grill pan over medium-high heat. Add the chicken, skin side down, and top with the foil- wrapped bricks. Cook for 4 minutes or until the skin is very crispy and the chicken is nearly done. Flip the chicken, and cook 1 more minute until done. Transfer to a serving platter and allow to stand for 5 minutes.
