I've started using apple sauce instead of vegetable oil in recipes and it works really well. I'm sure it all depends on the recipe, but I did it with banana pancakes this weekend and no one could tell the difference.

I disagree with the wet saute. Most broths have a lot of sodium in them. I just saute all my veggies in olive oil...

The wet saute is a great idea! Have you guys seen "Cook Yourself Thin" on Lifetime? Basically, they teach you how to cook your favorite meals for half the calories. http://www.mylifetime.com/on-tv/shows/cook-yourself-thin It's on each day at 5 & 5:30 (EST)

I love to bake my broccoli at a really high temperature. I bake it at like 450 or 500 degrees. I do it for about 10-12 minutes with a splash of Extra Virgin Olive Oil and flip the florettes halfway through. I also add garlic with only about 2-3 minutes left so it doesn't burn. Once it comes out, I drizze lemon juice over it. It's crispy and delicious!

I do all except the wet saute... I will definitely try it!!!!!!! I love adding citrus juice to just about everything, it makes all the flavors wake up and blend so well together
