A boring, cold bowl of cereal just won't do for your breakfast. You deserve something warm, wholesome, and satisfying.

Whip up a batch of this gluten-free quinoa bake featuring soft, cinnamon-spiced apples; plump raisins; and crunchy almonds. Enjoy yours plain or with a few spoonfuls of creamy Greek yogurt (three ounces adds about 70 calories).

Protein- and fiber-packed quinoa is just the thing to fill you up, kick-start your metabolism, and keep hunger at bay for hours. And the best part is that you can make this hearty breakfast bake ahead, so you'll have breakfast made for the next six mornings.

This recipe couldn't be easier to make — you don't even have to precook the quinoa. Just pour all the ingredients (that you probably already have in your kitchen) in the baking dish, and cook for an hour. Your house will smell like an apple pie factory! Apple Cinnamon Quinoa Breakfast Bake


  1. 1 cup uncooked quinoa
  2. 1 1/2 teaspoons cinnamon
  3. 1/2 teaspoon nutmeg
  4. 1/8 teaspoon ground cloves
  5. 2 apples, peeled, diced
  6. 1/4 cup raisins
  7. 2 eggs
  8. 2 cups vanilla soy milk
  9. 1/4 cup maple syrup
  10. 1/3 cup almonds, chopped


  1. Preheat the oven to 350°F. Lightly grease a 7-by-11-inch baking dish (an 8-by-8 works too).
  2. In a small bowl, mix the uncooked quinoa with the spices. Pour into greased dish.
  3. Sprinkle the apple and raisins on top of the quinoa.
  4. In that same small bowl, beat the eggs. Whisk in the soy milk and maple syrup.
  5. Pour the egg-and-milk mixture over the top of the fruit and quinoa. Lightly stir to partially submerge the fruit. Sprinkle the chopped almonds on top.
  6. Bake for 1 hour or until the casserole is mostly set with only a small amount of liquid left.
  7. Allow to cool, and then cover and refrigerate. In the morning, cut a square, microwave it on a plate, and enjoy alone or with a few dollops of Greek yogurt.

Can I use almond milk instead of soy?

First, you should always rinse quinoa before cooking it; otherwise it will have a bitter flavor; any recipe with quinoa should include that step. Then if it is rinsed, the spices will stick to the damp quinoa and spread evenly. I made this recipe as written with the exception of subbing in vanilla almond milk, and it came out delicious.

Yum! I, too, made some changes after reading these comments. I eliminated the clove, added some honey, and stirred it all up to get the spices mixed thoroughly. I also added some hemp powder to the liquid for added protein, and made an covered the top with oats.

I made this with sugar free almond milk and red quinoa.. it turned out quite tasty and I put coconut whip cream on it while still warm. I can see if you partially cooked the quinoa prior to this it would help make it seem like a coffee cake. I myself liked the chewy/crunchy layer..

very crumbly and the quinoa didn`t cook like it should have. I will add another egg and more milk next time, flavour was good.

After reading the comments, i tried this today and made some tweaks. I sautéed the apples in a bit of butter (really...just a smidge! ) and I decided to pre cook the quinoa part way, addin the spices to the mixture. I used unsweetened coconut milk. The idealized that if I added the eggs to the quinoa while still hot, I'd have quinoa scrambled eggs! So, I cooled the quinoa down some, then mixed in the eggs. This took a little too much time as I was starving! :-) I mixed in the the sautéed apples then put it into a pan and added chopped pecans on top. Cooked it for 20 minutes. I was pretty happy with the flavor! Sautéing the apples made them sweeter and it was awesome with Greek yogurt! I love quinoa and eat it all the time, but in this recipe it was a bit grainy. Next time I will precook the quinoa the night before...I will fully cook it till fluffy. In the morning, mix with eggs and sautéed apples. I think that would improve the texture and reduce morning cook time. A great way to use left over quinoa, too! Thanks for posting this recipe!

Yeah, like everyone else said, not very good tasting. The spices all sank to the bottom (should mix them with the eggs and milk instead of the dry quinoa). Dry and crumbly. Mine took an hour and a half, and the quinoa still wasn't cooked soft and fluffy. Healthy though!

It's ok. The apples are definitely necessary for flavor. The end product looks nice, but it's really crumbly. It fell apart when i cut and ate it. But, it's great to have breakfast already prepared - no excuses not to eat in the mornings!

Prefect for after a good workout. Def benefits from a dollup of yogurt on top. It's grains and eggs, so shouldn't taste like a dessert. I lke it.

Honestly this is isn't good at all. I feel like I wasted a bunch of ingredients on it. Not cake like at all and too crumbly. I'd rather make baked oatmeal with G-Free oats.

this is OK, im making a second batch and this one looks like its supposed to, the last one spilled, lol, this one is thicker. the flavor is kinda, meh, but...its not a dessert. i am using it as a snack here and there and i love that its sugar and gluten free. i did have to pour some extra sf syrup on, it feels like it needs to be sweeter. i havent gottten any yogurt to put on top, i keep forgetting, maybe when i go to the store next? its nothing to rave about but i like the premise and if tweaked it could maybe be better? idk i think of quonia as a dinner grain, i guess it woud be like eating rice for breakfast. very easy to make, that earns HIGH marks in my book, :)
