Apple Flax Oatmeal Cookies

  1. 3 tablespoons flax meal
    3 tablespoons water
    3/4 cups whole-wheat flour
    1/2 cup organic sugar
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 teaspoon cinnamon
    1/2 teaspoon vanilla
    1/2 cup vegetable oil
    1 small apple, peeled and chopped
    1 cup quick oats
    1/4 cup walnuts


  1. Preheat oven to 350°F.
  2. Place 1 tablespoon flax meal in a small bowl. Mix together with 3 tablespoons water.
  3. Let that thicken up (it's an alternative to using an egg) while you mix the rest of the ingredients together in a medium bowl. Then stir in the flax/water mixture.
  4. Spoon out cookies onto a lightly greased cookie sheet. Cook 12 to 15 minutes, or until edges are slightly brown. Place cookies on a cooling rack.
