From pancakes [1] to ice cream [2], is there nothing the mighty avocado can't do? And now, pizza. Yes! Pizza. Start with a cauliflower pizza crust [3], and you have a low-carb delight.

Avocado Pizza

Ingredients

  1. 1 cauliflower crust
    2 tablespoons olive oil
    1 tablespoon minced garlic
    1 cup vegan mozzarella cheese
    4 avocados
  1. To garnish:
    Lime zest
    Chives
    Cilantro (or parsley)
    Edible Flowers (geraniums)

Directions

  1. Brush pre-baked dough with olive oil and sprinkle with cheese. Bake at 450°F for 5 minutes, or until cheese is completely melted.
  2. Slice avocados into thin slices and arrange in a circular pattern around the pizza, starting 1 inch from the crust and spiraling your way inward. Top with lime zest, chives, cilantro (or parsley), and edible flowers. Enjoy!
