Eating less meat was one of my New Year's resolution, so of course I have been trying out vegetarian soups. My most recent was a delectable sweet potato and black bean soup. It is a great week day dinner, since it comes together so quickly, and in less than an hour, you have a healthy and hearty meal. To enhance the flavor and add more texture, I topped a bowl with a dollop of yogurt, a couple slices of avocado, lime juice, chopped cilantro, and scallions. Give this a try, you won't regret it!
