400-Calorie Cauliflower Rice and Beans

Rice and beans is a typical Mexican meal full of fiber and protein, but if you're watching your carb intake, here's a lighter version made with the oh-so magical white veggie — cauliflower!

Using cauliflower instead of rice not only cuts on carbs and ups the vitamin A and C, it also increases the fiber — this recipe offers 16.5 grams per 398-calorie serving. And cauliflower rice cooks in half the time, so this recipe will be done in under 30 minutes.

Cauliflower Rice and Beans

Ingredients

  1. Beans:
  1. 1 tablespoon olive oil
    1/4 yellow onion, chopped
    1 clove garlic, minced
    1 red pepper, diced
    15-ounce can of black beans (about 1 1/2 cups)
    1 roma tomato
    1/2 cup salsa
    1/4 cup corn
    1/4 teaspoon cayenne (add more or less depending on how much heat you like)
    Sea salt and pepper to taste
  1. Rice:
    1 head cauliflower, cut into florets (about 2 cups)
    1 tablespoon olive or coconut oil
    1 clove garlic, minced
    1/4 cup water or veggie broth
    1 teaspoon garlic powder
    Sea salt and pepper to taste

Directions

  1. Prepare the beans first by adding 1 tablespoon olive oil to a pan on medium heat. Add the chopped onion and minced garlic and sauté until softened, a few minutes.
  2. Add in the red pepper and sauté another 5 or so minutes.
  3. Add in the beans, tomato, salsa, corn, and seasonings and allow to simmer on low heat for 10 minutes.
  4. While the beans are simmering, make the cauliflower rice by pulsing the cauliflower florets in a food processor until finely chopped.
  5. Heat 1 tablespoon olive oil in a large skillet over medium heat and add in the minced clove of garlic. After a few minutes, add in the raw cauliflower and the water, cooking for 5 or so minutes until soft.
  6. Season the cauliflower rice with sea salt and pepper.
  7. Serve 1/2 the rice topped with 1/2 the beans, and enjoy!
