Coconut Berry Pancake Recipe

A Reader Recipe: Protein Berry Pancakes With Coconut Flour

Check out this recipe for protein coconut flour berry pancakes that FitSugar reader HealthyDiva shared in our Healthy Recipe community group.

Ingredients

  • 2 tbsp coconut flour
  • 3/4 cup egg whites
  • 3 tbsp water or milk (I used water)
  • 1 tsp baking powder
  • 1 scoop of Acai and Whey Protein Powder (Biochem Brand)
  • Flaxseeds

Mix all ingredients in a blender. Makes about 5-6 pancakes depending on size.

The topping is a mixture of Walden Farms Sugar Free Blueberry Spread and sugar free maple syrup. I put this in microwave for 20 seconds — such a great syrup flavor! A sliced banana and Galaxy Granola's Not Sweet Vanilla Flavor is on the top as well.
