As a lactose intolerant vegetarian of a few years I strongly suggest looking for cookbooks that use whole foods as opposed to processed foods. What is the point of being vegetarian if you the bulk of your diet is processed foods? My top picks are "How to Cook Everything Vegetarian" by Bittman and "Vegetarian Planet" Didi Emmons. Both offer great healthy options.
