Apple Cranberry Pecan Salad with Goat Cheese and Balsamic Vinaigrette

Fresh cranberries are not just for chutneys and muffins. Check out this easy and delicious salad chock-full of antioxidants! If you can't stomach the tartness of fresh, swap out for dried (unsweetened, if possible) cranberries.

8 cups mixed greens
2 apples, sliced thin (skin on)*
1 cup fresh cranberries (or dried)*
1 cup raw pecans*
4 tbsp. crumbled goat cheese
2 tbsp. extra-virgin olive oil
2 tbsp. balsamic vinegar
1 clove garlic, minced
1 small drop pure liquid stevia (or 1/8 tsp. grade-b maple syrup)
1/8 tsp. dried mustard
Dash Celtic sea salt and ground black pepper to taste


*Good source of fiber


  1. Combine olive oil, vinegar, garlic, stevia, dried mustard, salt, and pepper. Set aside. 
  2. Place mixed greens, cranberries, and pecans in large bowl and toss with dressing, reserving about 1 tablespoon.
  3. Divide evenly among four plates, top with apples and goat cheese, drizzle remaining dressing over top, and serve.
