Ginger Apple Stir-Fry Over Black Rice

  1. 1/2 cup shelled edamame
    1 tbsp coconut oil
    1 small apple, sliced
    1 tbsp brown rice vinegar
    1 tbsp fresh squeezed OJ
    1/2 tsp fresh grated ginger
    1 clove black garlic
    1/4 tsp crushed red pepper
    1/2 cup cooked black rice


  1. In skillet sauté edamame in coconut oil for 2-3 minutes. Remove edamame and set aside.
  2. In a medium bowl combine vinegar, OJ, ginger, garlic, and crushed red pepper. Toss apples in the vinegar mixture to coat.
  3. In the same skillet sauté the apples until tender, about 4-5 minutes. Add edamame quickly, to reheat.
  4. Place cooked rice on a serving plate. Cover with the apple mixture and serve.

Serves one.
