This basic recipe is flavored with maple syrup and gingerbread spices to warm you up, and the toppings add an extra sweetness and crunch. If you find the consistency of your chia pudding is off, adjust the amount of milk you are using in the recipe.

Gingerbread Chia Pudding

Ingredients

  1. Pudding:
  2. 1/4 cup chia seeds
  3. 3/4 cup unsweetened soy milk (or any milk you prefer)
  4. 1 tablespoon maple syrup
  5. 1/4 teaspoon ground ginger
  6. 1/4 teaspoon cinnamon
  7. Dash of ground clove
  8. Sprinkle of sea salt
  1. Toppings:
  2. 1 tablespoon raisins
  3. 1 tablespoon chopped pecans (or other nut)

Directions

  1. Add all the ingredients for the pudding (save the toppings) to a mason jar and stir to combine.
  2. Refrigerate at least six hours or overnight. Try to give the mixture an additional stir while it's setting.
  3. Add toppings and enjoy!
