Check out this recipe for gluten-free vegan pancakes from FitSugar reader prepel, she shared it in the Healthy Recipe community group.

This morning I decided to shake things up a bit, so instead of having my staple breakfast of cereal and yogurt, I decided to make pancakes! I wanted to make them healthy, vegetarian, gluten-free, and filling . . . they turned out amazing!

  1. 1 cup unsweetened soy milk
  2. 1 1/4 cups oats
  3. 1 tablespoon gluten-free flour
  4. 2 teaspoons flax seeds
  5. 1/4 teaspoon salt
  6. 1 teaspoon olive oil


Measure out all the ingredients and add them to a blender (I first used a mixer, and my kitchen was covered in soy milk, haha). Blend together for about 60 seconds. Heat the teaspoon of olive oil on a non-stick pancake pan and add 1/3 of the mixture.

After one minute, flip pancake over to other side. After one minute flip over again; it should be a golden-brown color. Do the same with the rest of the batter and voila! Healthy, vegan, gluten-free, and filling pancakes. I enjoyed mine with one tablespoon of low-fat cottage cheese and three tomato slices (I stacked the two pancakes like a sandwich), but I think they can go with anything!

these are great... i added organic peanut butter and sliced bananas on top and it is wonderful!

@Anna Monette Roberts Thanks for the info on Bob's Red Mill. I was more concerned if the person who made this recipe and the people who read it know that oats contain gluten, as I don’t think this is common knowledge. I wouldn’t want people to get sick as a result of a lack of information.

 @health food nut Oats are usually contaminated with gluten, because they are sometimes packaged in factories that also package wheat flour/products. However, Bob's Red Mill has certified Gluten Free Oats, which are packaged in a gluten-free facility. This reader recommends soy milk, but you could certainly use a different "nut" milk to your liking. I hope that helps!

These pancakes are not gluten free - they contain oats which have gluten. In some countries you can buy specially grown gluten free oats, but even then it's not 100% guaranteed. If you are gluten intolerant, or have celiac disease, do not eat this recipe. I also would not recommend Soy Milk to anyone. Substitute with coconut milk or almond milk for a much safer and healthier option.

excellent! my nephew loves pancakes but is allergic to eggs - this sounds like something he will be able to eat and not get the itchies

Oats themselves do not contain ANY gluten, but they are processed alongside gluten-containing grains unless you buy dedicated gluten-free oats. I get mine from Bob's Red Mill they have a separate factory for their gluten-free products. :)

I read that oats contain very small amounts of gluten so they won't affect someone with celiac dsease. My mom is allegic to gluten but she didn't have any negative side effects after eating these pancakes.... it's also likely I bought gluten-free oats..

Personally, I buy gluten-free oats. Not everyone with celiac can handle them though!
