Healthy Recipe: Chickpea and Tomato Salad

In the mood for something healthy and delicious for lunch? This salad is full of protein and fiber, and its lemony flavor reminds me of Spring. It's really easy to make, you just need to make it at least two hours ahead of time.

Chickpea and Tomato Salad


  1. 1 can garbanzo beans, drained and rinsed
  2. 1/2 red onion, chopped
  3. 1 tomato, diced
  4. 2 cloves garlic, minced
  5. 1/2 cup chopped parsley
  6. 3 tablespoons olive oil
  7. 2 tablespoon lemon juice
  8. salt and pepper to taste


Combine everything in a bowl, and chill for two hours before eating.

That's it. Pretty simple huh? You can add other veggies too like chopped cucumbers, celery, or red peppers to make it even more delicious.

I guess it's similar to a macaroni salad that needs to be chilled for two hours. I guess it just tastes better bc all the flavors have time to blend?
