Healthy Seafood Chowder Recipe

A Reader Recipe: Light Fish Chowder

If you're craving chowder but want something less fattening and calorie-laden, try this light fish chowder recipe from FitSugar reader Dara8182. She posted this in the FitSugar Healthy Recipe community group.

Chowder is a New England staple, but not the healthiest soup. I created this light version using fresh fish, grilled corn and herbs. It has only a tiny bit of light cream. The flavor is intense and authentic without being heavy.

Ingredients:
1lb bluefish filet, cut into 1" chunks (can also substitute mackerel, mullet, haddock)
3 cooked ears of corn, cut from cobb (preferably grilled but boiled or roasted will also work)
1/2 lb red potatoes, washed and cut into 1" chunks
3 ribs of celery, washed and diced
1 medium onion, diced
12 oz fish stock (if you can't find it, you can use fish bullion)
6 oz light cream
1/4 lb uncured bacon, diced
1 tbsp extra virgin olive oil
2 tbsp fresh chives, chopped
2 tbsp thyme, chopped
1 bay leaf
black pepper
