Do you ever just feel like you need to detox? Easter weekend was very indulgent for me, so I needed to make something seriously healthy and colorful to help get me back on track. The result is this amazing, filling, and flavorful pilaf that has only 170 calories per serving. I'm going to be eating it for lunch and dinner for the next few days!

Ingredients:

1 tbsp extra-virgin olive oil
1 medium onion, diced
3 carrots, peeled and shredded
1 large head of broccoli, trimmed, washed, and shredded
2 cups of green kale, ribs removed, washed, and shredded
1 cup of quinoa
3 cups low-sodium veggie broth
1 tsp black pepper
1 tsp paprika
1 tsp sea salt
Optional: 1 tsp red pepper flakes
