Get Your Green On With Kale

Photo: Leta ShyWith St. Patrick's Day upon us, our minds inevitably turn to the color green, and for the health-minded among us, what better way to go green than to incorporate kale into our lives? Kale's benefits are many: it is an anti-inflammatory food, high in fiber, antioxidants, vitamin K, and iron. It has more than earned its designation as a superfood. But how do you make kale a part of your daily diet? I have found that kale is extremely versatile and use it several ways. Perhaps my favorite way of incorporating kale is to add it to my breakfast smoothies. For a nutrient-dense start to my day, here are two different ingredient combinations I love.

Smoothie 1:

  • Kale
  • Coconut milk
  • Beets
  • Berries
  • Chia seeds
  • Protein powder 

Smoothie 2:

  • Kale
  • Coconut milk
  • Pineapple
  • Banana
  • Almonds
  • Chia seeds

I also like to use kale in veggie scrambles and frittatas. Combine eggs, broccoli, and kale, and top it with avocado for a protein-, healthy fat-, and vitamin-rich breakfast or lunch. Kale is also an easy ingredient to add to soup recipes. Try white bean and kale soup or minestrone with kale for a little extra nutrition punch. With kale, the sky really is the limit, whether enjoying it at breakfast, lunch, or dinner. And there's no better way to get your green on this St. Patrick's Day!
