If you are craving chips and salsa (or guacamole), try substituting with jicama slices. Jicama is a root vegetable found in Mexico that has a tough brown exterior but a crunchy, white, water-filled interior. Its texture is similar to an under-ripe watermelon, but it has a mild, slightly sweet flavor.
Bazaar restaurant in Los Angeles slices jicama thinly on a mandolin slicer, places a dollop of guacamole in the center of each slice, then folds up the edges around the guacamole to create a pocket. Jicama contains 46 calories per cup and is high in potassium.
